Italian Biga Recipe

1. Stir the yeast into the warm water and let stand until creamy, about 10 minutes
- 1/4 teaspoon (0.75 grams) active dry yeast
- 1/4 cup (2 ounces or 60 grams) warm water
- 3/4 cup plus 4 teaspoons (7 ounces or 200 grams) water, preferably bottled spring water, at room temperature
- 2 1/3 cups (11.6 ounces or 330 grams) unbleached all-purpose flour
- Vegetable oil, for the bowl
Pierogi

Each batch of dough makes about 12 pierogi
- 2 1/2 cups of flour
- 1 teaspoon salt
- 1 egg
- 2 tablespoons sour cream (I use reduced fat)
- 1/2 About 1/2 cup lukewarm water
- You will need additional flour to keep surfaces stick-free and additional water to "seal'' pierogi
- For the filling (to fill about 12 dozen)
- 5 pounds of potatoes, mashed
- Shredded cheddar cheese to taste (1-2 bags)
- My husband prepares mashed potatoes as he normally would for a meal, so you can do this according to your own tastes in terms of added milk, butter, salt and pepper

Barking Barley Brownies

Liquefy liver in a blender, when it's smooth add eggs and peanut butter
- 1 1/4 pounds beef liver -- or chicken liver
- 2 cups wheat germ
- 2 tablespoons whole wheat flour
- 1 cup cooked barley
- 2 whole eggs
- 3 tablespoons peanut butter
- 1 tablespoon olive oil
Pizzelle Recipe

YIELD: About 30 Pizzelles * Beat eggs and sugar
- 3 eggs
- 1 3/4 c. flour
- 1/2 tsp. anise seed or extract (optional see substitution ideas below)
- 1/2 c. UNSALTED butter (1/4 lb.)

- 3/4 c. sugar

Banana Bread Recipe

- 3 or 4 ripe bananas, smashed
- 1/3 cup melted butter
- 1 cup sugar (can easily reduce to 3/4 cup)

- 3 eggs, beaten
- 1 pinch ground black pepper
- 1 (10.75 ounce) can condensed cream of chicken soup
- 16 ounces sour cream
- 1 (2 pound) package frozen hash brown potatoes, thawed
- 2 cups cooked ham, cubed
- 1 onion, chopped
- 3/4 cup shredded Cheddar cheese

Crabmeat stuffed Portobello Mushroom Caps

- 4 large Portobello mushroom caps, stemmed
- 3 tbsp olive oil
- 1 1/4 tsp salt

- 1 cup whole milk
