Buttermilk Pancakes w/ Buttermilk Syrup

Syrup: 1-Combine buttermilk, sugar, butter, corn syrup, and baking soda in a LARGE soup pot
- Pancakes:
- 3 c. all-purpose flour
- 3 Tbsp. sugar
- 1 Tbsp. baking powder
- 1 1/2 tsp. baking soda
- 3/4 tsp. salt
- 3 c. buttermilk
- 1/2 c. milk
- 3 eggs, separated
- 1/3 c. (5 1/3 Tbsp.) butter, melted
- Syrup:
- 3/4 c. buttermilk
- 1 1/2 c. sugar
- 1 stick real butter
- 2 Tbsp. corn syrup
- 1 tsp. baking soda
- 1 tsp. vanilla
Seafood Spice Marinade****

-Mix spices with lemon juice
- 1 # Salmon or Shrimp- cut into chunks
- 1 tsp salt
- 1 tsp cumin
- 1/2 tsp cayenne
- Juice of 1 lemon
- Small amount of oil for pan

- Ingredients:
- For the crust:
- 1 -1 stick butter, cut into pea size pieces
- 1 -1 cup all-purpose flour, plus extra for rolling
- 1/4 -1/4 cup sugar
- -Pinch salt
- 1 -1 lemon, zested
- 1 -1 egg yolk
- 2 to 3 -2 to 3 tablespoons ice water
- For the filling:
- 1 -1 cup sugar
- 1/4 -1/4 cup apple cider
- 1/2 -1/2 lemon, juiced
- 1 -1 vanilla bean, seeds scraped
- 1 -1 stick butter, cut into pats
- 6 -6 apples, such as Golden Delicious, Granny Smith, McIntosh or your favorite baking apple, peeled, cored and quartered
- -Mascarpone cheese mixed with 2 tablespoon sugar, for garnish

- 3/4 C uncooked orzo pasta
- 1/4 tsp grated lemon rind
- 3 Tbs fresh lemon juice
- 1 Tbs extra virgin olive oil
- 1/2 tsp kosher salt
- 1/2 tsp minced garlic
- 1/4 tsp honey
- 1/8 tsp black pepper
- 1 C cooked shredded or diced boneless, skinless chicken
- 1/2 C diced red pepper
- 1/2 C diced cucumber
- 1/3 C sliced green onions
- 1 Tbs chopped fresh dill, or 1 tsp dried dill
- 1/2 C crumbled feta cheese
