Mocha Cupcakes with Espresso Buttercream Frosting

1. Mix the espresso powder into the brewed coffee until dissolved; set aside to cool to room temperature
- 1-1/3 all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup whole milk
- 1/2 cup strong brewed coffee
- 1 1/2 teaspoons espresso powder
- 1 teaspoon vanilla extract
- 1/2 cup (1 stick) unsalted butter, at room temperature
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1 egg, at room temperature
Sugar Donut Muffins ****

Preheat oven to 350F. Lightly grease a muffin tin with cooking spray or vegetable oil
- 3/4 cup sugar
- 1 large egg
- 1 1/2 cups all purpose flour
- 2 tsp baking power
- 1/4 tsp salt
- 1/4 tsp ground nutmeg
- 1/4 cup vegetable oil
- 3/4 cup milk (low fat is fine)
- 1 tsp vanilla extract
- 2 tbsp butter, melted
- 1/2 cup sugar, for rolling
Dried Cherry Almond Scones

- Ingredients:
- 3 cups all-purpose flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1 lemon, zested
- Pinch salt
- 1/2 teaspoon ground cinnamon
- 1 1/2 sticks cold butter, cut into pea size pieces
- 1 cup dried cherries
- 1/2 cup toasted sliced almonds
- 1/2-3/4 cup heavy cream
- Turbinado sugar, for garnishing
- Honey Butter:
- 1/2 pint cold heavy cream
- 2 tablespoons honey
- 1 orange, zested
Cold Sesame (Cucumber ) Noodles****

1. Heat a small saute pan over medium heat, then toast the sesame seeds until light brown, about 2-3 minutes
- Ingredients:
- 1 teaspoon sesame seeds
- 2 cucumbers
- 1 tablespoon tahini
- 1 tablespoon organic sunbutter (sugar-free)
- 1 teaspoon sesame oil
- 1 tablespoon coconut aminos
- 1 tablespoon rice wine vinegar (now Whole30-approved!)
- 1 tablespoon water
- 1/2 teaspoon crushed red pepper flakes
- 2 cloves garlic, crushed
- 1/4 teaspoon powdered ginger
- 1 scallion, dark green part only, thinly sliced
Fresh Country Sausage

I'm trying to duplicate the sausage I grew up with
- 2 1/2 lbs boned pork shoulder
- 2 1/2 lbs boneless beef chuck
- 1 tablespoon Kosher salt
- 1 tablespoon dried summer savory
- 1 tablespoon dried marjoram
- 1 tablespoon fine ground black pepper
- 2 tablespoons paprika
- 2 tablesoons granulated garlic (or three large fresh cloves)
- 1 cup ice water
Pink Lemonade Cookies w/ Pink Lemonade Frosting

Cookies 1. Preheat oven to 400 degrees F (200 degrees C)
- Cookies:
- 1/3 cup each butter and shortening
- 1/2 cup white sugar
- 1 egg
- 1/4 cup frozen pink or regular lemonade concentrate, thawed
- 1 3/4 cups sifted all-purpose flour
- 1/2 teaspoon baking powder (for altitudes up to 7000 feet)
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- Frosting:
- 2 tablespoons butter, softened
- 2 cups powdered sugar
- 3-4 tables prepared pink lemonade
- red food coloring (optional)
Cherry Tomato Salad

Directions: Combine the tomatoes, salt and sugar in a medium bowl; toss to combine
- Ingredients:
- 2 pints ripe cherry tomatoes, quartered (about 4 cups)*
- 1/4 tsp. salt
- 1/2 tsp. sugar
- 2 cloves garlic, minced or pressed
- 1/2 tsp. dried oregano
- 1 medium shallot, minced
- 1 tbsp. red wine vinegar
- 2 tbsp. extra-virgin olive oil
- Ground black pepper
- 1 small cucumber, peeled, seeded and diced into 1/2-inch chunks
- 4 oz. feta cheese, crumbled (about 1 cup)
- 1-2 tbsp. fresh parsley, minced
- Halved grape tomatoes would also work

To make the cookies: Position a rack in the middle of the oven
- For the cookies:
- 1 1/2 c. flour
- 1/2 t. baking powder
- 1/4 t. baking soda
- 1/4 t. salt
- 6 T. unsalted butter, at room temperature
- 1 c. sugar
- 1 T. lemon zest, finely grated (use a microplane rasp if you have one)
- 1 egg
- 1 T. freshly squeezed lemon juice
- 1 t. vanilla
- 1/2 c. buttermilk.
- For the filling:
- 6 T. unsalted butter, at room temperature
- 3/4 c. (6 oz.) cream cheese, at room temperature
- 1 t. vanilla
- 1 T. lemon zest, finely grated
- 2 T. freshly squeezed lemon juice
- 2 3/4 c. confectioner's sugar
