Birthday Cakes at the Brown's

- This is a tip for Duncan Hines Cake Mix that really improves the flavor.
- 1 box mix
- 4 eggs
- 1 cup milk
- 1/3 cup soft butter
- 2 1/2 cups thinly sliced strawberries
- 1/4 cup sugar
- 1/2 cup water
- 2 tsp cornstarch
Crispy Onion Straws****

Heat oil to 350 degrees. Working with a handful of onions at a time, dip in egg mixture and let excess drip off
- 6 oz onion slices (1 large onion)
- 1 egg
- 1 Tbs milk
- 3/4 C flour
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- vegetable oil for frying
Coconut Bread *****

Preheat oven to 180C /350F
- 2 1/2 cups all purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 2 tsp ground cinnamon
- 225 g (1 cup + 1 tbsp) caster sugar
- 150 g (2 cups) shredded coconut (Sweetened or unsweetened)
- 2 large eggs
- 1 1/4 cups milk (lowfat is fine)
- 1 tsp vanilla extract
- 1/3 cup butter, melted

Directions For the soup: Soak the bread, in a medium bowl of water to soften, about 15 to 20 minutes
- Ingredients:
- 8 slices white bread, crusts removed, bread broken into big chunks
- 2 pounds tomatoes, seeded
- 1 English cucumber, peeled
- 1 large white onion
- 1 green bell pepper, seeds and pith removed
- 2 garlic cloves, smashed
- Kosher salt
- High quality extra-virgin olive oil
- 2 to 3 tablespoons sherry vinegar
- 1/2 cup to 1 cup tomato juice, if needed
Cauliflower Fritters

In a large bowl, combine cauliflower, flour, garlic, eggs, grated cheese, parsley, salt and pepper
- 4 cups steamed cauliflower (roughly chopped)
- 2 cloves garlic, crushed
- 1 cup chick pea flour
- 2 eggs
- 1/2 cup Pecorino Romano
- 1/4 cup parsley, finely chopped
- 1/4 cup hot water
- salt and pepper
- 1/4 cup olive oil
Chilled Asparagus Soup with Goat Cheese

- Ingredients:
- Extra-virgin olive oil
- 1 onion, diced
- 2 ribs celery, diced
- 3 cloves garlic, smashed and finely chopped
- Kosher salt
- 2 bunches asparagus, stems trimmed
- 2 Idaho potatoes, peeled and diced
- 2 quarts chicken or vegetable stock
- 1 (4-ounce) log goat cheese, crumbled
S'mores Cake

Preheat oven to 375F. Lightly grease two 9-inch cake pans with cooking spray or oil and line with parchment paper
- 1/2 cup butter, room temperature
- 1 cup sugar
- 3 large egg yolks
- 1 tsp vanilla extract
- 2 cups graham cracker crumbs*
- 2 tsp baking powder
- 1/4 tsp salt
- 1 cup milk
- 3 large egg whites, room temperature
- Marshmallow Filling and Milk Chocolate Frosting
- 1 7-oz jar marshmallow creme
- 8-oz milk chocolate, chopped
- 1/4 cup half and half/cream
- 2 tbsp butter
- 2 tbsp corn syrup

- 2-3 avocados, cut in half and the pit removed
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1/4 teaspoon garlic powder
- 1/4 teaspoon sea salt
- Black pepper to taste
Vanilla Pudding

- 1/4 cup of flour
- 1 can of milk
- 1/2 cup of milk
- 2 eggs
