Roasted Broccoli with Shrimp *****

This is a fantastic dish! The roasted broccoli is so flavorful and the shrimp goes perfectly with it
- 2 pounds broccoli, cut into bite-size florets
- 4 tablespoons (1/4 cup) extra virgin olive oil
- 1 teaspoon whole coriander seeds (or 1/2 teaspoon ground)
- 1 teaspoon whole cumin seeds (or 1/2 teaspoon ground)
- 1 1/2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1/8 teaspoon hot chili powder
- 1 pound large shrimp, shelled and deveined
- 1 1/4 teaspoons lemon zest (from 1 large lemon)
- Lemon wedges, for serving

- 1/2 cup (100 gr) sugar
- 3/4 teaspoon sea salt, such as fleur de sel
- For the ice cream custard
- 2 cups (500 ml) whole milk, divided
- 11/2 cups (300 gr) sugar
- 4 tablespoons (60 gr) salted butter
- scant 1/2 teaspoon sea salt
- 1 cups (250 ml) heavy cream
- 5 large egg yolks
- 3/4 teaspoon vanilla extract

- 1 cup grits *quick or regular*
- 4 T butter
- 1 cup heavy cream
- (2 ts black pepper for savory grits)
Sushi Rice ****

- 1 cup "sushi" rice (wash for 2 min)
- 1 1/4 cup water
- 1/2 cup rice vinegar
- 2 T sugar
- 1 &1/2 ts salt
Basic Chicken Stock

- Ingredients:
- 2 pounds chicken thighs and legs, skins removed
- Extra-virgin olive oil
- 1 large onion, cut into 1-inch dice
- 2 ribs celery, cut into 1-inch dice
- 2 carrots, peeled and cut into 1-inch dice
- 3 cloves garlic, smashed
- 2 bay leaves
- 10 sprigs thyme
Soaked Granola

In a very large bowl, toss together the oats, flour, and coconut
- for soaking:
- 6 cups rolled oats
- 1 cup Brown Rice Flour
- 1 cup unsweetened dried coconut
- 1 cup coconut oil
- 1/4 cup water
- 6 Tbsp plain yogurt
- 2 cups raw almonds
- 1 1/2 cups very warm water
- for the final mixing and baking:
- 1/2 cup honey
- 1/4 cup water
- 2 T Lakanto Sweetener
- 1 1/2 tsp salt (dissolve in water)
- 1 tsp vanilla extract
