Taco Soup ***

This is a quick and easy soup! Next time I'll omit the beans and add some elbow macaroni
- 1 lb ground beef, cooked and drained
- 2 cans shoepeg corn
- 1 can Rotel(diced tomatoes w/green chilies)
- 1 cans drained pinto beans
- 1 tsp dry minced onion
- 1 package Ranch Dressing Mix
- 1 package taco seasoning
- salt and pepper to taste
- toppings: shredded cheddar,tortilla strips and sour cream
- Chicken stock to maintain desired consistency
- note:for tortilla strips,cut corn tortillas in half, then into thin strips and quick fry them in a little olive oil. Sprinkle with salt if desired.
Beef Tenderloin-Worth the Wait!*****

1- Combine all marinade ingredients in heavy saucepan; Mix well
- Ingredients:
- 4 1/2-5 lbs beef tenderloin (whole)
- Marinade
- 1/2 cup soy sauce
- 1/2 cup honey
- 2 tablespoons chopped ginger-(when I don't have fresh, I use 1 ts dry, 1 ts lemon juice and a pinch of cayenne)
- 1/4 cup balsamic vinegar
- 1/2 cup dry red wine
- 2 tablespoons black pepper
- 2 tablespoons chopped garlic
- 3 tablespoons cornstarch
- 1 bay leaves
BD Hot Spinach Salad

-Wash spinach, place in salad bowl
- 2 cups Baby Spinach
- Optional red onion slices
- 2 Hard boiled eggs sliced
- 2 slices BD approved bacon, cooked and crumbled
- 1/4 cup + 2 Tablespoons Lakanto sweetner
- 2 teaspoons Dijon mustard
- 1/4 cup red wine vinegar
- This makes enough dressing for several salads.

Seasoned Bread Crumbs***

1-Take 12 slices of stale bread and let air dry (or place crumbs on pan and dry in oven at 225 F)
- 4-cups bread crumbs
- 1 teaspoon parsley flakes (crushed)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon sugar
- 1/2 teaspoon oregano or 1/2 teaspoon italian seasoning, crushed
- 1/2 teaspoon pepper
- 1 teaspoon salt
Traditional Play Dough****

I use to make this all the time when the kids were little
- 1 cup flour
- 1 cup warm water
- 2 teaspoons cream of tartar
- 1 teaspoon oil
- 1/4 cup salt

- 2 cups fresh berries: strawberries, blueberries, raspberries, blackberries
- 1 teaspoon pure almond or vanilla extract

Preheat oven to 350. Combine flour, brown sugar, oats, salt, chopped pecans, and melted butter in a medium bowl

- 2/3 c. brown sugar
- 1/2 c. uncooked regular oats
- 1/2 tsp. salt
- 1/3 c. chopped pecans

- 1/3 c. white sugar
- 1 1/2 tsp. cornstarch

- 3/4 cup milk

- 8-10 Thick slices of bread- Challah,French or Italian
- (don't use fresh bread, it works better when the bread is a day or two old)
- 2-4 T butter
Cucumber and Zucchini Salad

In small saucepan, simmer pineapple juice over medium heat until reduced to 2 tbsp
- 1/2 c pineapple juice
- 1 large cucumber, seeded, and halved lengthwise
- 1 large zucchini, halved lengthwise
- 2 c peeled and diced fresh pineapple
- 1 tsp chipotle puree
- 1 tsp Dijon mustard
- 2 tbsp olive oil
- Salt and pepper
Crunchy Noodle Salad****

Bring a large pot of salted water to a boil
- Kosher salt
- 1/2 pound thin spaghetti
- 1 pound sugar snap peas
- 1 cup vegetable oil
- 1/4 cup rice wine vinegar
- 1/3 cup soy sauce
- 3 tablespoons dark sesame oil
- 1 tablespoon honey
- 2 garlic cloves, minced
- 1 teaspoon grated fresh ginger
- 3 tablespoons toasted white sesame seeds, divided
- 1/2 cup smooth peanut butter
- 2 red bell peppers, cored and seeded, and thinly sliced
- 4 scallions (with and green parts), sliced diagonally
- 3 tablespoons chopped fresh parsley leaves
