This is a quick and easy soup! Next time I'll omit the beans and add some elbow macaroni

  • 1 lb ground beef, cooked and drained
  • 2 cans shoepeg corn
  • 1 can Rotel(diced tomatoes w/green chilies)
  • 1 cans drained pinto beans
  • 1 tsp dry minced onion
  • 1 package Ranch Dressing Mix
  • 1 package taco seasoning
  • salt and pepper to taste
  • toppings: shredded cheddar,tortilla strips and sour cream
  • Chicken stock to maintain desired consistency
  • note:for tortilla strips,cut corn tortillas in half, then into thin strips and quick fry them in a little olive oil. Sprinkle with salt if desired.

1- Combine all marinade ingredients in heavy saucepan; Mix well

  • Ingredients:
  • 4 1/2-5 lbs beef tenderloin (whole)
  • Marinade
  • 1/2 cup soy sauce
  • 1/2 cup honey
  • 2 tablespoons chopped ginger-(when I don't have fresh, I use 1 ts dry, 1 ts lemon juice and a pinch of cayenne)
  • 1/4 cup balsamic vinegar
  • 1/2 cup dry red wine
  • 2 tablespoons black pepper
  • 2 tablespoons chopped garlic
  • 3 tablespoons cornstarch
  • 1 bay leaves

  • 2 cups Baby Spinach
  • Optional red onion slices
  • 2 Hard boiled eggs sliced
  • 2 slices BD approved bacon, cooked and crumbled
