Crunchy Potato Wedges

1. Combine salt, pepper, onion and garlic powders, cayenne, and oregano in small bowl
- 4 teaspoons kosher salt
- 1/2 teaspoon ground black pepper
- 2 teaspoons onion powder
- 1 teaspoon garlic powder
- 3/4 teaspoon cayenne pepper
- 1 teaspoon dried oregano
- 3 large russet potatoes (about 1 3/4 pounds), scrubbed and cut into 1/4-inch wedges
- 1/4 cup vegetable oil or peanut oil, plus 3 quarts for frying
- 1 1/2 cups all-purpose flour
- 1/2 cup cornstarch
- 1 cup buttermilk-(1 cup milk+1 T lemon juice,let mixture stand 15 min)
- 1/2 teaspoon baking soda
Over the Rainbow-Mac and Cheese****

Preheat 350* -Cook pasta in salted water for 8-10 min
- 1 pound elbow macaroni(4 cups)
- 1 stick butter
- 1/2 cup shredded muenster
- 1/2 cup shredded mild cheddar
- 1/2 cup shredded sharp cheddar
- 1/2 cup shredded monterey jack
- 8 oz velveeta
- 2 cups Half & Half
- 2 eggs beaten
- 1/2 tsp salt
- 1/8 tsp black pepper
- 1 T butter
- buttered bread crumbs
Thai Noodle Salad ****

Dressing: -Place everything in a blender and mix until smooth
- Dressing:
- 1/2 C peanut butter
- 1 lime, juiced and zested
- 2 1/2 t sesame oil
- 1 T seasoned rice wine vinegar
- 2 T soy sauce
- 3 T honey
- 2 cloves garlic, roughly chopped
- 1 T minced ginger
- 1/2 C roughly chopped cilantro (stems and all)
- 1/2 C vegetable oil
- 1/4 t kosher salt*may vary depending on saltyness of peanut butter
- 2-3 t sriracha chili sauce*use more or less to taste
- 2-4 T water*more or less to control thickness
- Slaw:
- 8 oz Linguine-broken in half
- 4 C shredded napa cabbage
- 2 C thinly sliced purple cabbage
- 1/2 red bell pepper, thinly sliced
- 1/2 yellow pepper, thinly sliced
- 1 medium carrot, julienned
- 1/2 medium cucumber, halved and sliced
- 1/4 of a red onion, thinly sliced

- 2 tablespoons horseradish (little less)
- 1/4 teaspoon paprika
- 1/4 teaspoon salt
- 1/8 teaspoon garlic powder
- 1/8 teaspoon dried oregano
- dash ground pepper
- dash cayenne pepper
Broiled Tilapia Parmesan****

- 3 tablespoons mayonnaise
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon dried basil
- 1/4 teaspoon ground black pepper

- 1/8 teaspoon celery salt
- 2 pounds tilapia fillets

- 1 cup water
- 1/2 cup butter
- 1/4 tsp salt
- 2 Tb brown sugar
- 1 tsp vanilla
- 1 cup flour

- 1/4 cup sugar
- 1/4 tsp cinnamon
- Oil for deep frying-360*

- 1/2 cup milk (nonfat, lowfat or otherwise)
- 1 tbsp sugar
- 1/4 tsp salt
- 1/2 tbsp unsalted butter, melted and cooled slightly
- 1/3 cup pumpkin puree (canned or fresh)
- 1/2 tsp ground cinnamon
- pinch ground cloves
