Jam Filled Empanadas****

1. DAY BEFORE: Cream butter and cream cheese together until smoothly blended
- 1/2 cup butter, softened
- 1 (3 oz) pkg cream cheese
- 1 cup sifted all-purpose flour
- 1 cup fruit preserves
- 1/3 cup white sugar
- 1 tsp ground cinnamon
Krispy Kale Chips

1. Place kale in a bowl and toss with oil
- 4 cups raw kale, washed, dried, torn into 2-inch pieces
- 1 tablespoon coconut oil, melted, or olive oil

Stewed Tomatoes****

-Combine tomatoes and butter in heavy pot
- 2-16 oz cans peeled whole tomatoes
- 2 T butter
- 5 T sugar
- S&P
- pinch of nutmeg
- If in season, use 10 ripe tomatoes, peeled and cored
Chipotle's Guacamole*****

Mash up avocado with a fork
- 2 large ripe Hass avocado, peeled and pitted
- 2 tsp. fresh lime juice
- 2 tbsp. chopped fresh cilantro
- 1/4 cup finely chopped red onions
- 1 clove of garlic, finely minced
- 1 serrano chili, seeded and chopped (be careful not to touch your eyes after working with this)
- 1/2 tsp. coarse salt
- P.S. wanna keep your guac from turning brown? Keep the avocado pits buried in the leftover guac...It'll keep for days.
Chicken "pot-pie" Casserole ****

Good, basic, "kid friendly" stand-by
- servings:
- 2 cups chopped,cooked chicken
- 1 1/4 cups chicken broth
- 1 can cream of chicken soup
- 1 cup flour
- 2 ts baking powder
- 1 ts salt
- 1/2 ts pepper
- 1/2 cup margarine(melted)
- 1 cup milk
- note:When making a double batch, I've found that you really can't double everything. Here's what works for me.
- 4 cups chicken
- 2 cups broth
- 1 1/2 cup flour
- 3 ts bk powder
- 1 1/2 ts salt
- 1/2 ts pepper
- 3/4 cup margarine
- 1 1/2 cup milk
Bread Stuffing****

-Melt butter in large sauté pan
- 1 3/4 cup chopped onion
- 3 cup chopped celery
- 3 cup butter and or broth combination
- 1-2 T salt
- 1 T thyme
- 1 1/2 T sage
- 1 1/2 tsp pepper
- 2-3 loaves of bread cubed
Firecracker Shrimp*****

- marinade:
- 25 large shrimp, deveined and scored (see below)
- 15 eggroll/springroll wrappers, cut in half diagonally (2 triangles)
- oil for frying
- Sweet chili sauce, to taste
- 1 tsp minced garlic
- 1/2 tsp grated ginger
- 1/2 tsp sesame oil
- 1 tsp soy sauce
- 1 tsp sweet chili sauce
- 1 tsp cornstarch
- cornstarch "paste":
- 1 Tb cornstarch
- 1/4 cup water
Clam and Bacon Dip

In a skillet, cook the bacon over moderate heat, stirring, until golden and crisp
- 6 slices bacon
- 13-ounce can minced clams
- 8 ounces cream cheese
- 1/4 cup sour cream
- 1/3 cup chopped red bell pepper
- 3 scallions, chopped fine
- 2 tablespoons fresh basil, finely chopped
- 1 teaspoon bottled horseradish, drained
- 2 teaspoons fresh lemon juice
- 1 teaspoon Worcestershire sauce
- Tabasco to taste
Exploded potatoes...Frisco's

Preheat oven to 350°F. Grease a shallow casserole dish
- 3 baking potatoes (baked peeled and coarsely mashed)
- 1/4 cup butter (margarine)
- 1/4 cup green onion (top)
- 1 tbsp chives (dried, 2 tablespoons fresh)
- 1/2 lb bacon (cooked crisp drained and crumbled)
- 1/2 cup dressing (hidden valley ranch)
- 1/2 cup sour cream
- 2 cup sharp cheddar cheese (grated)
- 1/2 tsp salt
- 1/2 tsp pepper
