This is a quick and easy soup! Next time I'll omit the beans and add some elbow macaroni. I like the beans, but I'm the only one.more
lb ground beef, cooked and drained
cans shoepeg corn
can Rotel(diced tomatoes w/green chilies)
cans drained pinto beans
tsp dry minced onion
package Ranch Dressing Mix
package taco seasoning
salt and pepper to taste
toppings: shredded cheddar,tortilla strips and sour cream
Chicken stock to maintain desired consistency
note:for tortilla strips,cut corn tortillas in half, then into thin strips and quick fry them in a little olive oil. Sprinkle with salt if desired.
Mix all and simmer at least one hour.
