Taco Soup ***

This is a quick and easy soup! Next time I'll omit the beans and add some elbow macaroni. I like the beans, but I'm the only one.

Ingredients

  • 1

    lb ground beef, cooked and drained

  • 2

    cans shoepeg corn

  • 1

    can Rotel(diced tomatoes w/green chilies)

  • 1

    cans drained pinto beans

  • 1

    tsp dry minced onion

  • 1

    package Ranch Dressing Mix

  • 1

    package taco seasoning

  • salt and pepper to taste

  • toppings: shredded cheddar,tortilla strips and sour cream

  • Chicken stock to maintain desired consistency

  • note:for tortilla strips,cut corn tortillas in half, then into thin strips and quick fry them in a little olive oil. Sprinkle with salt if desired.

Directions

Mix all and simmer at least one hour.
