- 1/8 teaspoon garlic powder

- 24 fresh large shrimp, peeled and de-veined
- 2 eggs, beaten
- 8 fluid ounces milk
- 2 cups flour

- 1/4 cup malt vinegar

- 2 tsp garlic powder

Layered Tex-Mex Salad

Cornbread : Preheat oven to 400 degrees F
- Cornbread Croutons:
- Butter, for preparing 8 by 8-inch glass pan
- 1 (8.5-ounce) box cornbread mix (recommended: Jiffy)
- 1 large egg
- 1/3 cup milk
- Salad:
- 1 (15.5-ounce) can black beans, drained and rinsed
- 1 packet sazon seasoning
- Salt and freshly ground black pepper
- 1 cup salsa
- 2 tomatoes, seeded and chopped
- 1 head romaine lettuce, cut into strips
- Creamy Lime Dressing, recipe follows
- 1 1/2 cups grated Monterey jack cheese
- 1 1/2 cups grated Cheddar
- Special equipment: glass trifle dish
- Creamy Lime Dressing:
- 2 tablespoons freshly chopped cilantro leaves
- 1 tablespoon red wine vinegar
- 1 teaspoon lime zest
- 1/4 cup lime juice
- 1/2 cup sour cream
- 1 clove garlic, smashed
- 1 tablespoon honey
- 1/2 cup extra-virgin olive oil
- Salt and freshly ground black pepper
- Special equipment: blender
- Blend all the ingredients except the olive oil until smooth. While machine is running, slowly drizzle in the oil until incorporated. Season, to taste, with salt and pepper.
- Yield: 1 1/2 cups

- 2 cups finely crushed pretzels
- 1/2 cup sugar, divided
- 2/3 cup butter or margarine, melted
- 1-1/2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
- 2 Tbsp. milk
- 1 cup thawed COOL WHIP Whipped Topping
- 2 cups boiling water
- 1 pkg. (6 oz.) JELL-O Strawberry Flavor Gelatin
- 1-1/2 cups cold water
- 1 qt. (4 cups) strawberries, sliced
Fluffy Strawberry Buttercream****

- 2 cans (28 ounces each) whole peeled tomatoes
- 2 tablespoons extra-virgin olive oil
- Coarse salt and ground pepper
- 2 large globe eggplants (about 2 pounds total), cut crosswise into 1/4-inch-thick slices
- 1 cup all-purpose flour
- 3 eggs, lightly beaten
- 1 cup plain dried breadcrumbs
- Vegetable oil, for frying
- 1/2 cup grated Parmesan
- 1/2 pound whole fresh mozzarella, cut into large chunks

- 1/2 cup flour
- 1 1/2 cup chicken broth
- 1 Qt half & half
- 1 cup milk
- 1 T fresh parsley(1 tsp dry)

- 1 # Lump crab meat
