Cream of Crab Soup*****
This is one of our Christmas Eve traditions.
- 1/2 cup butter
- 1/2 cup flour
- 1 1/2 cup chicken broth
- 1 Qt half & half
- 1 cup milk
- 1 T fresh parsley(1 tsp dry)
- 1 T Old Bay
- 1 # Lump crab meat
-Make a roux of butter and flour til smooth.
-Slowly stir in broth, simmer 2 min.
-Slowly stir in 1/2&1/2 and milk.
-Continue to stir until thick, don't rush...
-Add parsley and Old Bay.
-Gently stir in crab and heat through.
notes:carefully pick through and clean crab meat carefully. Serve with homemade croutons...(dry-toss-sprinkle-dry).
