Butter Tart Squares

If you’re a Canadian, chances are you’ve had a butter tart
- 1 1/3 cups all purpose flour
- 2 tablespoons granulated sugar
- 1/2 cup butter
- 2 eggs
- 1 & 1/4 cups packed brown sugar
- 1/4 cup melted butter
- 1 tablespoon vinegar
- 1 teaspoon vanilla
- 1 teaspoon all-purpose flour
Brown Sugar Body Rub*****

Directions: Combine everything but oil in a bowl and then add in oil and stir to combine
- 1/4 C brown sugar
- 1/4 C white sugar
- 1/2 t cinnamon
- 1/2 t ground ginger
- 1/2 t ground cloves
- Oil: olive oil
Chicken Tetrezzini***

Directions 1.Bring a large pot of salted water to a boil (for pasta)
- Ingredients
- Coarse salt and ground pepper
- 6 tablespoons butter
- 1 pound white mushrooms, trimmed and sliced 1/4 inch thick
- 1/2 cup all-purpose flour
- 3 cups milk
- 1 can (14.5 ounces) reduced-sodium chicken broth
- 3/4 cup dry white wine
- 3 cups grated Parmesan cheese
- 1/2 teaspoon dried thyme leaves
- 1 pound linguine, broken in half
- 1 rotisserie chicken, skin removed, meat shredded (about 4 cups)
- 1 package (10 ounces) frozen peas, thawed and drained
Peruvian Beef Saltado(stir-fry) ***

This was the first recipe I've used that called for using flank steak the way I would normally use round steak
- 1 T cooking oil
- 1 to 1 1/2 puond flank steak, sliced into 1 1/2 inch wide strips
- 1 large red onion, quartered and thinly sliced
- 1 large tomato,peeled, cored, halved, and sliced
- 1 garlic clove, minced
- salt & pepper to taste
- 4 ts soy sauce
- 2 ts red wine vinegar
- I peeled the tomato by dropping into boiling water just until the skin splits, then I put it in a bowl of ice water. The skin slips right off!
Shrimp Ceviche

Slightly pre-cooking the shrimp, is a precaution when you're not sure how fresh the shrimp is
- 2 pounds med shrimp-peeled and deveined
- 2 tablespoons salt
- 1 1/2 cups fresh lime juice, about 8 to 12 limes
- 1 1/2 cups fresh lemon juice, about 4 to 6 lemons
- 1 cup finely chopped red onion
- 2 serrano chiles minced, ribs and seeds removed
- 1 1/2 cups chopped cilantro
- 1 cucumber peeled, seeded and chopped 1/2" pcs
- 2 avocados chopped 1/2" pcs

- Ingredients:
- For the chocolate-covered peanuts:
- 4 oz. semisweet or bittersweet chocolate, chopped
- 1 cup roasted peanuts (salted, unsalted, or honey-roasted)
- For the fudge ripple:
- 1/2 cup sugar
- 1/3 cup light corn syrup
- 1/2 cup water
- 6 tbsp. unsweetened Dutch-process cocoa powder
- 1/2 tsp. vanilla extract
- For the ice cream:
- 3/4 cup whole milk
- 3/4 cup sugar
- Pinch of salt
- 1 1/2 cups heavy cream
- 1/2 vanilla bean, split lengthwise
- 4 large egg yolks
- 1/4 tsp. vanilla extract

Directions: Preheat the oven to 375° F
- Ingredients:
- 1 1/2 cups sugar, divided
- 1 tsp. baking powder
- 3 cups all-purpose flour
- 1/4 tsp. salt
- Zest of half a lemon
- 16 tbsp. cold, unsalted butter cut into small pieces
- 1 large egg
- 5 cups peeled, chopped peaches (about 5 peaches)
- 5 tsp. cornstarch
- Juice of 1 lemon
- Pinch of freshly grated nutmeg
