- Rub:
- 8 boneless skinless chicken thighs, about 2lbs
- 2 t vegetable oil
- 2 t granulated garlic
- 2 t chili powder
- 1/2 t onion powder
- 1/2 t coriander
- 1 t kosher salt
- 1 t cumin
- 1/2 t chipotle chili powder
- Glaze:
- 1/2 C Honey
- 1 T Cider Vinegar
- Combine the rub spices in bowl and mix well.

- 1/2 cup (125 mL) unsalted butter
- 1/2 cup (125 mL) all-purpose flour
- 4 cups (1 L) 2% milk
- ¹⁄8 tsp (0.5 mL) ground nutmeg
- 1 8 oz (225 g) pkg cream cheese (full fat)
- 1 1/2 cups (375 mL) grated old cheddar cheese
- 1 cup (250 mL) grated Swiss Gruyère
- 1/2 cup (125 mL) dry breadcrumbs
