Mint Chocolate Double Layer Cake

- Healthy Mint Frosting:
- 2 cups spelt or whole wheat pastry flour (If anyone tries a gluten-free option, please report back and I will update the post)
- 3/4 cup cacao or unsweetened cocoa powder
- 1 tsp baking soda
- 1 tsp salt
- 1 1/2 cups xylitol or sugar of choice
- 1 cup mini chocolate chips, optional
- 2/3 cup yogurt of choice
- 1 1/2 cup water
- 1/4 cup plus 2 tbsp vegetable oil or melted coconut oil
- 1 1/2 tbsp pure vanilla extract
- 1/2 tsp pure peppermint extract
- 2 (13.5oz) cans full-fat coconut milk (must be canned)
- 1/4 tsp pure vanilla extract
- 3/4 tsp pure peppermint extract
- 1/8 tsp stevia or 2 Tbsp powdered sugar (or to taste)
- 1/4 tsp spirulina or a few drops green food coloring (optional)
- Healthy Chocolate Sauce:
- 4 tablespoons virgin coconut oil
- 1/4 cup cocoa powder
- 1/4 cup agave OR you can use nunaturals vanilla stevia drops (I use 10 vanilla drops, but if you don’t like super-bitter chocolate, triple that amount)
Grandma's Candied Sweet Potatoes

- 2 cans (29oz each) yams or sweet potatoes (OR 6 meduim--boiled)
- salt & paprika
- 3/4 to 1 cup brown sugar (or 1/4 to 1/2 cup pure maple syrup)
- 4-6 Tbsp butter
- cinnamon
- 3/4 to 1 cup boiling water (only add as needed)

- CARAMEL SAUCE:
- 1/2 cup of THM Baking Blend
- 1/2 cup cocoa powder
- 1/2 cup butter (melted)
- 1/2 cup 0% greek yogurt or sour cream
- 1/2 cup of Pyure Stevia or Truvia (if using THM Gentle Sweet use 2/3 cup, you can use 3 or 4 tbsp. of THM Super Sweet BLEND or you can use 1 cup of Swerve or Xylitol)
- 8 drops of Liquid Stevia (you can add about a tsp more of Pyure Stevia or Truvia)
- 4 eggs
- 1 tsp vanilla
- 1 tsp baking powder
- sprinkle of salt
- 1/2 cup of pecans or walnuts (optional)
- 1/3 cup (and more for a topping) Caramel Sauce (see recipe below)
- 1/2 cup of butter salted or unsalted
- 1/2 cup of powdered gentle sweet (or equivalent)
- 1 tsp of blackstrap molasses
- 1 cup of heavy cream
- 1 tsp vanilla
- Salt to taste

- For the Sausage:
- 1 pound ground pork (or chicken or turkey)
- 1/4 teaspoon ground sage (**I use 1/2 tsp)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried thyme
- 1/4 teaspoon onion powder
- ¹⁄8 teaspoon cayenne pepper
- ¹⁄8 teaspoon nutmeg
- 1 teaspoon salt (**I use 1/2 tsp)
- ¹⁄8 teaspoon black pepper (**I use 1/4 tsp)
- Grated zest of 1 lemon (**I omit)
- For the Mash:
- 2 medium sweet potatoes, peeled and cut into large dice
- 4 tablespoon ghee or clarified butter
- 1/2 cup full-fat coconut milk
- 1 onion, thinly sliced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper

Mix all ingredients together in a bowl
- Chocolate version: Replace coconut with Hot Chocolate Butter:
- 1/2 cup Coconut Butter (Cacao butter might work, but I haven’t tried it.)
- 12 or more drops pure peppermint extract (12 drops is a scant 1/4 tsp.)
- 1 and 1/2 tbsp agave (or to taste), or stevia drops to taste
- optional: sprinkles, crushed candy canes, other garnishes
- 4 tablespoons (60g) virgin coconut oil
- 1/2 cup plus 1 tablespoon (52g) cocoa powder.

- 1 1/2 lbs chicken breasts, boneless and skinless cut into pieces
- 1 tablespoon canola oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tablespoon curry powder
- 1 teaspoon ground ginger
- 4 cups cauliflower florets
- 1 (13 1/2 ounce) can light coconut milk
- 1/2 cup low sodium chicken broth or 1/2 cup water

Coconut Flour Pumpkin Muffins~Gluten Free

Preheat oven to 400F. Grease a muffin pan or line with paper liners
- Optional Cream Cheese Icing:
- 1/2 cup coconut flour
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon powder (I increase to 2 tsp)
- 1/4 teaspoon cloves
- 1/4 teaspoon allspice/nutmeg
- 1/2 cup pumpkin puree
- 6 eggs (or 4 whole eggs and 2 whites)
- 1 teaspoon vanilla
- 1/2 cup coconut oil, melted (I sub. coconut milk, or decrease oil to 1/4 cup)
- 3/8 cup maple syrup/about 3 1/2 oz (I use 1/4 cup, or sub. 1 tsp stevia)
- 1/4 tsp salt
- 1/4 cup chopped walnut pieces, optional
- Note: I like to add 1/4 cup craisins
- Variations: Instead of Pumpkin can use 3/4 cup Zucchini instead. Or I may try mashed banana.
