Potato Freezer Rolls

These are our favorite rolls, especially for holidays such as Thanksgiving
- 1 Tbsp Yeast
- 1/2 cup warm water (115-120 degrees)
- 1-2 potatoes, cooked & mashed = 1/2 cup mashed potatoes
- 1/4 cup butter
- 1/4 cup sugar
- 1 1/2 teaspoon salt
- 1 cup milk (scalded)
- 1 egg
- 4-5 cups flour(as needed)

- 4 tbsp unpasteurized honey (K note: strict vegans can use agave)
Instant Pot Coconut Chicken Curry

This recipe is the Chicken variation of Coconut Fish Curry By Laura Pazzaglia http://instantpot
- 1 1/2 pounds chicken breast, cut into bite-size pieces
- 1 heaping cup cherry tomatoes
- 2 green chiles, sliced into strips
- 2 medium onions, sliced into strips
- 2 garlic cloves, finely chopped
- 1 Tbsp freshly grated ginger, or 1/8 tsp ginger Powder
- 6 curry leaves, or bay leaves, or kaffir lime Leaves, or basil
- 1 Tbsp ground coriander
- 2 tsp ground cumin
- 1/2 tsp ground turmeric
- 1 tsp chili powder , or 1 tsp of Hot Pepper Flakes
- 1/2 tsp ground fenugreek
- OR 3 Tbsp of curry powder mix(instead of the 5 spices noted above)
- 2 cups un-sweetened coconut milk (about 1 small can)
- 2 tsps salt to taste
- Lemon juice to taste

- 1/2 cup almonds, toasted
- 1/2 cup pecans, toasted
- 1/2 cup shredded, unsweetened coconut, toasted
- 1/2 cup almond butter
- 1/4 cup coconut oil, melted
- 2 eggs
- 1 1/2 tsp orange extract
- Zest of 1 orange
- 1 Tbsp honey
- 1 1/2 tsp pure vanilla extract
- 1/4 cup protein powder (optional)
- 1 ounce 80% dark chocolate, finely chopped (or 70%, if you prefer sweeter)

- Low-carb tortillas:
- 2 2 2 eggs
- 2 2 2 egg whites
- 5 5 5 oz. cream cheese
- 1 1/2 1 1/2 1/2 teaspoons ground psyllium husk powder
- 1 1 1 tablespoon coconut flour
- 1/2 1/2 1/2 teaspoon salt
- Ground Beef Filling:
- 1 1 1 lb ground beef
- 2 2 2 tablespoons olive oil
- 2 2 2 tablespoons Tex-Mex seasoning
- 1 1 1 cup water
- salt and pepper
- Salsa:
- 2 2 2 avocados
- 1 1 1 tomato, diced
