- Sauce:
- 3 pounds ground beef
- 1 1/2 cups dry bread crumbs
- 1/2 cup chopped onion
- 3 eggs
- 1 1/2 tsp salt
- 1 tsp mustard, dry
- 3/4 cup ketchup
- 1/4 cup ketchup
- 4 Tbsp brown sugar
- 1 1/2 tsp mustard, dry
- 1/4 tsp ground nutmeg

- 26 ounce can Cream of Mushroom Soup (family size can, or use 3 small cans)
- 1/2 cup milk or water
- 1 1/2 cup rice
- 12 chicken pieces such as thighs or 6 chicken breasts, I prefer boneless
- 1 packet Onion Soup Mix

- Crust:
- 3/4 cup almonds (or cashews)
- 3/4 cup shredded unsweetened coconut
- 4 Tbsp raw cacao powder
- 2 Tbsp filtered water
- 1 Tbsp liquid vanilla (alcohol free)
- 1/2 tsp liquid vanilla stevia (alcohol free)
- pinch of sea salt
- Filling:
- 12 ounces raw Cashews (2 cups) (optional: soak cashews 2-4 hours, then rinse)
- 1 3/4 cup filtered water
- 7 Tbsp raw cacoa powder
- 2-3 Tbsp liquid vanilla (alcohol free)
- 1 tsp liquid vanilla stevia (alcohol free)
- 2 tsp coffee flavoring (Frontier brand)
- 1/4 tsp sea salt
- 1/2 cup raw cacao butter (melted)
- 1/2 cup coconut oil (melted)
Rice Cooker Mac & Cheese

I don't know many kids who don't like macaroni and cheese
- 2 cups pasta (i used macaroni, but you could also use rotini, faralle or bite size pasta)
- 1 1/2 cups chicken stock
- 1 teaspoon salt
- 1 cup whole milk
- 1 1/2 cups shredded cheese
Quinoa Pizza Bites

These pizza bites would make the perfect Super Bowl Party appetizer
- 1 cup cooked quinoa
- 1 cup canned (or cooked) pinto beans
- 1/2 cup tomato paste
- 2 tsp dry basil
- 1/2 tsp onion powder
- 1/2 tsp garlic
- 1/2 tsp salt
- 1 tsp sugar of choice, or pinch stevia (this is for balance and can be left out if you absolutely must)
- mozzarella cheese of choice, such as Daiya, optional
Crock Pot Enchiladas

Fry beef with onion, drain
- Substitution:
- 1 pound ground beef or turkey, cooked
- 1/2 cup chopped onion
- 15 oz Kidney Beans, rinsed & drained
- 15 oz Canned Tomatoes with green chilis
- 6 oz Tomato Paste
- 1 packages Enchilada Sauce Mix
- 1 cup water
- 8 oz Cheddar Cheese, shredded (2 cup)
- 6 each tortilla, flour 6 inch
- Can use 4 cups homemade enchilada sauce in place of tomatoes,tomato paste, water, and sauce mix
- Low Carb version:
- Double all ingredients except tortillas. This increases number of servings.

- 1 1/4 lbs. boneless, skinless chicken breasts, cut into 1-inch chunks
- 2 cups fresh pineapple, cut into 1-inch chunks (about 1/2 of small pineapple)
- 1 large bell pepper, any color, cut into 1-inch pieces
- 1/2 large red onion, cut into 1-inch pieces
- 1/4 cup coconut aminos*
- 1 Tbsp. water
- 1/2 tsp. garlic powder
- 1/4 tsp. dried ground ginger
- 1 Tbsp. toasted sesame oil
- Metal or Wood skewers

- Cake:
- 1/2 cup coconut flour
- 1/4 cup plus 2 tbsp. raw cacao powder (or unsweetened cocoa powder)
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/4 tsp. KAL Stevia or sweetener of choice (to taste)**
- 1 tbsp. coconut sugar (optional)
- Pinch of salt
- 1 tsp. vinegar
- 5 large eggs
- 1/4 cup coconut oil (melted)
- 1/2 tbsp. pure vanilla extract
- 1/4 cup coconut milk (preferably canned)
- 1/4 cup water
- 1/4 cup brewed strong coffee, cold (or more coconut milk)
- 2 oz. dark chocolate chips (see note below for different options)
- I also experimented and used 1/2 tsp. of Sweet Leaf Organic Stevia. 1/4 cup or more of coconut sugar would also work. Be sure to taste the batter and add more if needed
- Dairy Filling:
- 1 cup heavy whipping cream
- 1 tsp. vanilla extract
- 4 servings KAL stevia, or sweetener of choice (to taste)
- 1 tsp. Gelatin (see notes)
- Dairy Free Frosting/Filling:
- 5 tbsp coconut cream concentrate (I used Tropical Traditions)
- 4 tbsp raw cacao powder or unsweetened cocoa
- 1 tbsp pure vanilla extract
- 1/2 cup water, room temperature
- 6 servings Kal Stevia or 2 tbsp raw honey (to taste)
