Beef Pot Roast

- 1 teaspoon olive oil
- 1 (3-pound) boneless chuck roast, trimmed
- 1 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 2 cups coarsely chopped onion
- 1 cup dry red wine
- 4 thyme sprigs
- 3 garlic cloves, chopped
- 1 (14-ounce) can fat-free, less-sodium beef broth
- 1 bay leaf
- 4 large carrots, peeled and cut diagonally into 1-inch pieces
- 2 pounds Yukon gold potatoes, peeled and cut into 2-inch pieces
- Fresh thyme leaves (optional)

Directions MAKE THE COOKIES: Sift flour, baking powder, and 1/2 teaspoon salt into a large bowl
- FOR THE COOKIES:
- 4 cups all-purpose flour, plus more for surface
- 1 teaspoon baking powder
- Coarse salt
- 2 sticks unsalted butter, room temperature
- 2 cups sugar
- 2 large eggs
- 2 teaspoons pure vanilla extract
- FOR THE ROYAL ICING:
- 1 cup water, plus more if needed
- 1/2 cup meringue powder (nycake.com)
- 2 pounds confectioners' sugar, sifted
- Gel-paste food coloring in Red Red, Royal Blue, and Navy Blue (nycake.com)
Stuffed Pizza Rolls

Preheat oven to heat specified on pizza dough package
- 1 roll refrigerated pizza dough* (or make your own)
- marinara/pizza sauce
- 2 T grated Parmesan cheese
- 1 T olive oil or melted butter
- 1/2 t garlic powder
- 1 t dried Italian seasoning
- mozzerella cheese
- Pizza toppings of your choice: ie, ham and pineapple, pepperoni slices, sausage, etc.
Broccoli-Cauliflower Salad

Mix all ingredients
- 1 cup mayonnaise
- 1/2 cup sugar
- 2 cups shredded mozzarella
- 2 bunches green onions, chopped
- 1 container bacon bits
- 1 head broccoli cut into small pieces
- 1/2-1 head cauliflower cut into small pieces
Cinnamon Pear Smoothie

- 3/4 C water
- 1-2 handfuls of greens
- 2 pears
- 1/4 C raw cashews
- 1/2 inch ginger, peeled
- 1/4 tsp nutmeg
- 1/4 tsp cinnamon
- 1/4 tsp cardamom
Buffalo Chicken Dip

Place all ingredients in crock pot and melt on low, stirring occasionally
- 2 large cans chicken
- 3 cups shredded colby jack cheese
- 8 oz cream cheese
- 1/2 stick butter
- 1 bottle Frank's Buffalo hot wing sauce

- Dressing:
- 2/3 cup canola oil
- 1/4 cup red wine vinegar
- 2 tsp lemon juice
- 2 tsp soy sauce
- 1 tsp sugar
- 1 tsp dry mustard
- 1/2 tsp curry powder
- 1/2 tsp salt
- 1/2 tsp seasoned pepper
- 1/4 tsp garlic powder
- Salad:
- 1 pkg (10 oz) baby spinach
- bacon, crumbled
- hard boiled eggs
- sliced red onion
- sliced mushrooms
- halved grape tomatoes
