Pumpkin Sheet Cake Recipe

Directions In a large bowl, beat the sugar, pumpkin, oil and eggs
- CREAM CHEESE FROSTING:
- 1-1/2 cups sugar
- 1 can (15 ounces) solid-pack pumpkin
- 1 cup canola oil
- 4 eggs
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon ground cloves
- 2 packages (3 ounces each) cream cheese, softened
- 1/2 cup butter, softened
- 2 teaspoons Spice Islands® pure vanilla extract
- 4-1/2 cups confectioners' sugar
- 24 candy pumpkins
Skillet Pork Chop Sauté with Peaches

- 2 teaspoons olive oil
- 4 (4-ounce) center-cut boneless pork loin chops, trimmed
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons thinly sliced shallots
- 2 teaspoons chopped fresh thyme
- 2 peaches, each cut into 8 wedges
- 1/2 cup dry white wine
- 1/2 cup fat-free, lower-sodium chicken broth
- 2 teaspoons honey
- 2 teaspoons butter
Tarragon Vinaigrette

Combine all dressing ingredients and whisk or place in jar with lid and shake to combine
- 1 c. vegetable oil
- 1/2 c. tarragon wine vinegar
- 1 tbsp. fresh chopped tarragon
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 4 tsp. sugar
- 1 tsp. Dijon mustard
Lime Sublime Green Smoothie

- 1 C water
- 1-2 handfuls of greens
- 1 C green grapes
- Small wedge of lime (or 1 tsp of zest if you don’t have a high-powered blender)
- 1/2 C pineapple, fresh is best
Meyer Lemon Chicken Piccata

- 2 (8-ounce) skinless, boneless chicken breast halves
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup all-purpose flour
- 2 tablespoons unsalted butter, divided
- 1/3 cup sauvignon blanc or other crisp, tart white wine
- 1/2 cup fat-free, lower-sodium chicken broth
- 1/3 cup fresh Meyer lemon juice (about 3 lemons)
- 2 tablespoons capers, rinsed and drained
- 1/4 cup chopped fresh flat-leaf parsley
Tropical Heaven Green Smoothie

- 3/4 C of water or coconut water
- 1-2 handfuls of greens
- 1/2 mango, peeled and pitted
- 1/4 C pineapple
- Juice of 1 orange
- Sweeten with honey (to taste)
- Ice, if needed
- Optional superfood booster: 1 Tbsp flax oil or whole flax
Jamaican Jerk Chicken

- 1 red onion, chopped
- 1 1/2 tsp dried thyme
- 1 tsp ground allspice
- 4 tsp white pepper
- 1/4 cup chopped green onion
- 2 tsp salt
- 1/4 tsp ground nutmeg
- 5 small jalapenos
- 2 T oil
- splash of rum
- lime
Zippy Lime Smoothie

- 1-2 handfuls of greens
- 2 Tbsp fresh lime juice
- 1 small wedge of lime (or 1 tsp of zest)

- 1/4 cup extra-virgin olive oil, divided
- 2 1/4 teaspoons kosher salt, divided
- 1/4 teaspoon black pepper
- 6 whole peeled garlic cloves
- 1/4 teaspoon crushed red pepper
- 12 ounces uncooked fettuccine
- 3/4 cup (3 ounces) shaved fresh Parmigiano-Reggiano cheese
- 3 tablespoons torn fresh basil
