Sugar Cookie Bars

Cream butter and sugar until fluffy
- 1 cup butter, room temperature
- 2 cups sugar
- 4 eggs
- 2 tsp vanilla
- 5 cups flour
- 1 tsp salt
- 1/2 tsp baking soda
- 1 tsp lemon zest (optional)
- Frosting
- 1/2 cup butter, room temperature
- 4 ounces cream cheese (1/2 of an 8 oz block) softened
- 1 tsp vanilla (I used almond extract for half of the frosting)
- 1/4 tsp salt
- 4 cups powdered sugar
- 5 Tbsp milk
- food coloring (if desired)

- Frosting:
- 3/4 cup shortening
- 1 cup sugar
- 2 eggs
- 1 tsp flavoring (vanilla, almond)
- 2 1/2 cups sifted flour

- 1/2 cup butter flavor crisco
- 1 lb (4 cups) powdered sugar

- 3 cloves garlic , finely chopped
- 2 Tbsp. dried oregano

- 6 red bell peppers
- Sea salt and freshly ground black pepper
- 11/2 cups all-purpose flour
- 2 tablespoons garlic powder
- 1 tablespoon dried oregano
- 1 large egg
- 2 cups milk
- 1 (3 1/2 pound) whole free range chicken, cut into 8 pieces
- Extra-virgin olive oil
- 3 anchovy fillets, mashed
- 1 teaspoon red pepper flakes
- 4 garlic cloves, sliced
- 1 medium onion, chopped
- 2 large ripe tomatoes, coarsely chopped

- 1-2 handfuls of greens
- 1 grapefruit, peeled and seeded
- 1 oranges, peeled and seeded (plus small piece of peel)

- 1 inch of fresh ginger root, peeled
- Optional superfood booster: 1 tsp bee pollen
Crispy Southwest Chicken Wrap

Mix rice together with chili powder, cumin and garlic salt
- 1 cup cooked rice, warm or at room temperature
- 1 cup cooked, shredded chicken (or other leftover meat, like shredded pork or beef)
- 1 can black beans, rinsed and drained
- 1 green onion, finely sliced (white and green parts)
- 1/2 red or green pepper, diced
- 1/4 cup fresh cilantro, chopped
- juice of 1 lime
- 1/2 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic salt
- 2 cups shredded cheese (I use a combination of Monterey jack and sharp cheddar)
- Sour cream (optional)
- 6 burrito-sized flour tortillas

1. Preheat oven to 425°. Place first 6 ingredients (in order of ingredient list) in a food processor
- 1 3/4 cups all-purpose flour
- 1/4 cup plain yellow cornmeal
- 2 tablespoons sugar
- 3/4 teaspoon baking powder
- 1/2 teaspoon salt
- 6 tablespoons cold butter, cut into pieces
- 1 large egg, lightly beaten
- 2/3 cup buttermilk
- 1 tablespoon orange marmalade
- 1 (16-oz.) container fresh strawberries, cut in half
- 1/2 cup orange marmalade
- 2 cups heavy cream
- 2 tablespoons sugar
- Garnishes: fresh mint sprigs, sweetened whipped cream
Mozzarella Dip

Mix all ingredients and refrigerate
- 1 cup sour cream
- 1 pint real mayonnaise
- 1 T parsley
- 1 tsp seasoning salt
- 1 tsp sugar
- 1 T parmesan cheese
- 2 T dried minced onion
- dash of garlic powder
- dash of pepper
- 2 cups shredded mozzarella cheese
Whole Wheat Zucchini Muffins

- 1 egg, beaten
- 1 tsp. vanilla
- 1/2 cup Splenda
- 1/4 cup Agave nectar
- (you can also use 2/3 cup sugar to replace the Splenda and Agave nectar)
- 1 1/2 cups grated zucchini (squeezed, then packed into measuring cup)
- 1/3 cup canola oil (can also use melted butter)
- 1 1/4 tsp. baking soda
- pinch of salt
- 1 1/2 cups white whole wheat flour (can also use all-purpose flour)
- 1 tsp. ground cinnamon (I used a generous rounded teaspoon of cinnamon)
- 1/4 tsp. ground nutmeg
- 1 cup chopped pecans (or use walnuts or almonds if you prefer)
