Mom's Fruit Salad

Drain fruit (reserving 1 1/2 cups of the juice)and mix together in a large bowl
- 1 lg frozen strawberries
- 1 lg can fruit cocktail
- 1 lg can pineapple tidbits
- 1 can mandarin oranges
- 1 apple, peeled & diced
- Optional: banana, cantaloupe, watermelon, grapes
- 1 sm pkg cook & serve vanilla pudding
Pumpkin Bars

Cream 1st 4 ingredients, until fluffy
- Frosting:
- 4 eggs
- 1 2/3 c. sugar
- 1 c. oil
- 16 oz can pumpkin
- 2 c. flour
- 2 tsp cinnamon
- 2 tsp baking powder
- 1 tsp salt
- 1 tsp baking soda
- 1 3 oz pkg cream cheese
- 1/2 c margarine
- 1/2 tsp vanilla
- 2 c powdered sugar
Crispy Cheddar Chicken

Crush crackers. If using chicken breasts instead of tenders, cut each into 3 large pieces
- Sauce:
- 2 lbs chicken tenders or 4 lg chicken breasts
- 2 sleeves Ritz crackers
- 1/4 tsp salt
- 1/8 tsp pepper
- 1/2 c. whole milk
- 3 c. cheddar cheese, grated
- 1 tsp dried parsley
- 1 10 oz can cream of mushroom soup
- 2 Tbsp sour cream
- 2 Tbsp butter
Crockpot Italian Chicken

Place the chicken in a crockpot and sprinkle Italian dressing over it
- 4 chicken breasts
- 1 packet dry Zesty Italian dressing (Regular is fine but I like zesty better. Sometimes I use a packet and a half.)
- 1 (8 oz) package cream cheese, softened
- 1-2 cans cream of chicken soup (depending how cream cheesy you want it)

- 16 Rhodes™ Dinner Rolls, thawed (or use your own dough recipe)
- 3 medium size Granny Smith apples, peeled and chopped
- 1/3 cup brown sugar
- 1/2 cup chopped pecans
- 1 teaspoon cinnamon
- Zest and juice from half a lemon (about 2 teaspoons of juice)
- 1 cup powdered sugar
- 3-4 teaspoons water
- 1/2 teaspoon vanilla
- 1/2 teaspoon almond flavoring

Instructions Preheat oven to 350 degrees
- 3 tablespoons olive oil
- 1 white onion, diced
- 3 stalks celery, diced
- 3 carrots, diced
- 2 tablespoons garlic, minced
- 2 cups cooked chicken breast, shredded
- 1 cup white rice
- 16 ounces wild rice
- 3 tablespoons butter
- 1/4 cup whole wheat flour
- 1 cup vegetable broth
- 4 cups cheddar cheese, shredded
- Garlic salt
- Salt & pepper

- 1 lb ground beef, cooked, drained
- 1 cup basil and garlic tomato pasta sauce (from 16-oz jar)
- 1 can (8 oz) Pillsbury® refrigerated crescent dinner rolls
- 1 1/2 cups shredded Italian cheese blend (6 oz)
- 1/4 teaspoon dried basil leaves

Peel, core and slice apples
- 4-6 Granny Smith apples
- 8 graham crackers finely chopped
- 3/4 c. packed brown sugar
- 1/2 c. all purpose flour
- 1/2 c. quick or old fashioned oats
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 c. butter or margarine melted
- Whipped cream or ice cream (optional)
Penne with Roasted Asparagus and Balsamic Butter

Heat the oven to 400 degrees
- 1 pound fresh asparagus spears
- 1 Tbsp olive oil
- 3/4 tsp salt
- 1/2 tsp black pepper
- 1/2 c. balsamic vinegar
- 1 tsp brown sugar

- 4 Tbsp butter, cut into pieces
- 1/3 c. freshly grated Parmesan cheese (plus more for serving)
