Seven Layer Dip I

In a large skillet, brown ground beef
- 1 1/2 pounds ground beef
- 1 (16 ounce) can refried beans
- 4 cups shredded Cheddar-Monterey Jack cheese blend
- 1 (8 ounce) container sour cream
- 1 cup guacamole
- 1 cup salsa
- 1 (2.25 ounce) can black olives, chopped
- 1/2 cup chopped tomatoes
- 1/2 cup chopped green onions
Blueberry Buttermilk Pancakes

In a bowl, using an electric mixer, beat the eggs on medium speed until frothy
- 2 eggs
- 2 c. all purpose flour, sifted
- 3 Tbsp. sugar
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 2 1/4 c. buttermilk
- 4 Tbsp (1/2 stick) unsalted butter, melted
- 1/2 tsp vanilla extract
- 1-2 Tbsp vegetable oil or nonstick cooking spray
- 1 cup fresh blueberries
- Powdered sugar for dusting

- 1/2 cup powdered chocolate drink mix
- 1/2 cup white sugar
- 1/4 cup instant coffee granules
- 1/2 gallon vanilla ice cream
- 1/2 gallon chocolate ice cream
- 1 cup frozen whipped topping, thawed
- 1/4 cup shaved milk chocolate (optional)
Beef with Broccoli

1. Whisk together the baking soda, sugar, cornstarch, soy sauce, water and vegetable oil in a large bowl
- Marinade:
- 1/2 tsp baking soda
- 1 tsp sugar
- 1 tbsp cornstarch
- 1 tbsp soy sauce
- 1 tbsp water
- 2 tbsp vegetable oil
- 1 1/2 lbs flank steak, sliced into thin strips
- After marinating:
- 1/2 c. soy sauce
- 2 tbsp brown sugar
- 4 cloves garlic, minced
- 2 tbsp flour
- 1 tbsp sherry
- 3 tbsp vegetable oil
- 2 heads broccoli
Fresh Salsa

Place tomatoes in the manual food processor and chop to desired consistency
- 1 pint grape tomatoes
- 1 medium red onion
- 1/4 c. cilantro
- 1-2 cloves garlic
- 1 lime
- 1/2 tsp salt
- 1 jalapeno, stem removed (optional)
Olive Garden Pasta e Fagioli Soup

This recipe does make a LOT of soup (approximately 12-15 servings
- 2 lbs. ground beef
- 1 onion, chopped
- 3 carrots, shredded
- 1 c. celery, chopped
- 2 (28 oz.) cans diced tomatoes, undrained
- 1 (16 oz.) can red kidney beans, drained
- 1 (16 oz.) can white kidney beans, drained
- 4 cups beef stock
- 3 tsp. oregano
- 2 tsp. pepper
- 5 tsp. parsley
- 1 (20 oz.) jar Prego traditional spaghetti sauce
- 8 oz. pasta (I like using ditali pasta)

1. Boil 10 c. of water in a large pot
- 10 c. boiling water
- 6 tea bags (blackberry flavor)
- 2 c. white sugar
- 1 (16 oz.) can frozen lemonade concentrate
- 1 (16 oz) can frozen orange juice concentrate
- 1 pint blackberry brandy
- 1 (2 liter) bottle Hawaiian Fruit Punch
Garlic & Lemon Chicken with Red Potatoes & Beans

- INGREDIENTS
- 6 tablespoons olive oil
- 2 lemons, 1 thinly sliced, 1 juiced
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 3/4 pound trimmed green beans
- 8 small red potatoes, quartered
- 4 chicken breasts
Southwest Chicken Chop Salad

Directions: In a large bowl, stir all salad ingredients together, excluding the tortilla chips and avocado
- 2 c. chopped chicken (cooked)
- 1 green bell pepper, diced
- 1 c. black beans
- 1 c. sweet yellow corn
- 2 roma tomatoes
- 4 green onions
- 1 head ice berg lettuce,
- cilantro
- 2 ripe avocados, diced
- 1 cup crushed tortilla chips
- Dressing: 1/2 cup mayonnaise 2/3 c. greek yogurt, 1 Tbsp ranch seasoning, 1 Tbsp taco seasoning
Cocktail Meatballs

- 1 8 oz can jellied cranberry sauce
- 3/4 c. chili sauce
- 1 TBSP brown sugar
