Ingredients
- 1 T olive oil
- 10 oz sliced mushrooms
- 2 shallots, finely chopped (about 1/2 c)
- 1/2 c brandy
- 1/2 c beef broth
- 2 T Dijon mustard
- 2 teas fresh thyme leaves
- 1/2 c heavy cream
- Fresh chives

Preparation
Step 1
Season steaks with olive oil and steak and pepper. Grill your steaks or hamb patties.
Heat 1 T oil and add mushrooms and shallots to skillet. Stir until mushrooms and shallots are tender 4 to 5 minutes. Remove skillet from heat and stir in brandy. (Caution-brandy may ignite) Add broth, Dijon mustard, and thyme. Stir to blend. Add cream and simmer until mushroom sauce is slightly thickened 4-5 minutes. Season with salt and pepper. Spoon sauce over meat and garnish with chives.
