APPLESAUCE - SIMPLY RECIPES

Preparation time: 45 minutes
- 3 to 4 lbs of peeled, cored, and quartered apples. (Make sure you use a good cooking apple like Golden Delicious, Granny Smith, Fuji, Jonathan, Mcintosh, or Gravenstein.) (4 pounds after peeling and coring.)
- 4 strips of lemon peel - use a vegetable peeler to strip 4 lengths
- Juice of one lemon, about 3-4 Tbsp
- 3 inches of cinnamon stick or 2 tsps cinnamon
- 1/4 to 1/2 cup of dark brown sugar
- up to 1/4 cup of white sugar
- 1 cup of water
- 1/2 teaspoon of salt
LEMON CHIFFON CAKE

1. Place egg whites in a large bowl; let stand at room temperature for 30 minutes
- LEMON FROSTING:
- 7 eggs, separated
- 2 cups all-purpose flour
- 1-1/2 cups sugar
- 3 tsps baking powder
- 1 tsp salt
- 1/2 cup lemon juice
- 1/4 cup water
- 1/2 cup canola oil
- 4 tsps grated lemon peel
- 2 tsps vanilla extract
- 1/2 tsp cream of tartar
- 1/3 cup butter, softened
- 3 cups confectioners' sugar
- 1/4 cup water or lemon juice (lemon juice will make it really tart)
- 4 tsps grated lemon peel (can be omitted if you use lemon juice instead of water)
MACARONI COLESLAW

Cook macaroni according to package directions; drain and rinse in cold water
- DRESSING:
- 1 package (7 ounces) ring macaroni or ditalini
- 1 package (14 ounces) coleslaw mix
- 2 medium onions, finely chopped
- 2 celery ribs, finely chopped
- 1 medium cucumber, finely chopped
- 1 can (8 ounces) whole water chestnuts, drained and chopped
- 1-1/2 cups Mayo
- 1/3 cup sugar
- 1/4 cup cider vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon paprika
PREMIER WHITE CHEESECAKE TART

- 1 1/2 cups chocolate wafer crumbs
- 6 tablespoons (3/4 stick) butter, melted
- 1/2 cup sugar, divided
- Two 8 oz. pkgs. Cream cheese, softened
- 2 eggs
- One 6 oz. pkg. (3 foil-wrapped bars) Nestle Premier White baking bars, melted
- 1 teaspoon vanilla extract

- 1 10 oz. can Valley Fresh Premium Chunk Chicken, drain
- 1 15 oz package refrigerate pie crusts
- 3 Tbsp. butter or margarine
- 1/2 cup each diced peeled potatoes and chopped onions
- 1/4 cup slice celery
- 1/2 cup frozen peas and carrots
- 1 10-3/4 oz. can condensed cream of chicken soup
