HERBED CHICKEN PAILLARD

Season chicken with salt and pepper
- 2 boneless, skinless, chicken breast halves, about 1 1/4 lb. total, pounded to 1/3” thickness.
- Salt and freshly ground pepper, to taste.
- 1/2 cup all-purpose flour
- 1-2 Tbsps unsalted butter
- 1-2 Tbsps extra-virgin olive oil
- 1 small shallot, minced
- 1/2 cup dry vermouth
- 1/2 cup chicken stock
- 2 Tbsps chicken demi-glace
- 2 Tbsps minced fresh chives
- 2 Tbsps minced fresh flat-leaf parsley
- 2 Tbsps minced fresh tarragon
FIESTA MEAT LOAF

Saute onion, celery and green pepper in butter until vegetables are tender
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/4 cup chopped green pepper
- 2 Tbsp butter
- 1 bottle Heinz chili Sauce
- 1-1/2 pounds lean ground beef
- 1 cup soft bread crumbs
- 1 egg, slightly beaten
- 1/8 tsp pepper

- 2 1/4 pounds bone-in chicken breasts
- 2 tablespoons olive oil
- 2 medium carrots, peeled and diced
- 2 ribs celery, trimmed and diced
- 1 leek, trimmed, cleaned and thinly sliced
- 3 tablespoons all-purpose flour
- 1/4 teaspoon each salt and pepper
- 4 cups reduced-sodium chicken broth
- 1 cup frozen peas, thawed
- 1 tablespoon chopped fresh dill
- Dumplings
- 2 cups biscuit mix (such as Heart Healthy Bisquick)
- 1/2 cup milk
- 1 tablespoon chopped fresh dill

- 2 Tbps butter
- 2-1/2 cups sliced apples

In a bowl, cream together butter, sugar and eggs until very creamy and well blended
- 1/2 cup butter
- 1 cup sugar
- 3 eggs
- Dash salt
- 1 cup all-purpose flour
- 3/4 cup chocolate-flavored syrup, canned
- 2 tsp vanilla
- 3/4 cup chopped walnuts or pecans
- Pecans or walnuts for garnish
SHREDDED BARBECUE BEEF SANDWICHES

In a small bowl, whisk the first eight ingredients
- 1 can (10-1/2 ounces) condensed beef broth, undiluted
- 1 cup ketchup
- 1/2 cup packed brown sugar
- 1/2 cup lemon juice
- 3 tablespoons steak sauce
- 2 garlic cloves, minced
- 1 teaspoon pepper
- 1 teaspoon Worcestershire sauce
- 1 beef eye round roast (3-1/2 pounds), cut in half
- 1 teaspoon salt
- 16 sandwich buns, split
