EASY CHOCOLATE FUDGE (Home Cooking Adventure)

- 14 oz (400 g) sweetened condensed milk
- 10 oz (300 g) bittersweet chocolate (minimum 55% cacao)
- pinch of salt
- 1 tsp vanilla extract
- 1 tbsp unsweetened cocoa powder
- 1/2 cup toasted walnuts, chopped, optional
- orange or lemon zest, optional
- dried fruits, optional

- 1 cup coarsely chopped walnuts
PARMESAN CHICKEN

Place chicken in a shallow 3-quart baking dish that has been coated with cooking spray
- 8 boneless, skinless chicken breast halves
- 1 cup fat-free mayonnaise
- 1/2 cup nonfat Parmesan cheese topping
- 2 tsps dried oregano
- 1/8 tsp pepper
- Paprika
A TOUCH OF CURRY VEGETABLE DIP

This is one of my all-time favorite vegetable dips
- 1 1/2 cups mayonnaise
- 1/3 cup honey
- 1 teaspoon curry powder
- 3 tablespoons ketchup
- 1 small onions, finely chopped or 1 tablespoon onion flakes
- 1 teaspoon lemon juice
- 3 -6 drops hot sauce (i.e. Tabasco)
PUNCH MIX

Mix together in a large punch bowl and enjoy!

MANDARIN SALAD From Sue Hanson

Almonds and sugar Cook over very low heat, stirring constantly till sugar melts and almonds are coated
- Almonds
- 1/4 cup slivered almonds
- 4 tsp. sugar
- Salad
- 1/4 head lettuce, torn
- 1/4 bunch romaine or green leaf lettuce, torn
- 2 ribs celery, chopped
- 2 green onions, sliced
- 1 can mandarin oranges, drained
SHRIMP AND HERB RISOTTO

In a 6-quart pressure cooker, melt 1 tablespoon butter over medium
- 2 tablespoons unsalted butter, divided
- 1 small yellow onion, finely chopped
- 2 cloves garlic, minced
- 1 1/2 cups Arborio or Carnaroli rice
- 4 cups chicken broth, divided
- Salt and pepper
- 1 pound large shrimp (31 to 35), peeled and deveined
- 1/2 cup grated Parmesan (2 ounces)
- 3 tablespoons chopped fresh parsley, plus more for serving
- 3 tablespoons chopped fresh basil leaves, plus more for serving
SHRIMP SCAMPI (Taste of Home)

In a 10-in. ovenproof skillet, saute garlic in butter and oil until fragrant
- 3 to 4 garlic cloves, minced
- 1/4 cup butter, cubed
- 1/4 cup olive oil
- 1 pound uncooked medium shrimp, peeled and deveined
- 1/4 cup lemon juice
- 1/2 teaspoon pepper
- 1/4 teaspoon dried oregano
- 1/2 cup white wine
- 1/2 cup grated Parmesan cheese
- 1/4 cup dry bread crumbs
- 1/4 cup minced fresh parsley
- Hot cooked angel hair pasta
PUMPKIN BREAD #2

Combine first 4 ingredients, mix well
- 2 cups pumpkin
- 4 eggs
- 1 cup salad oil
- 1/3 cup water
- 3 ½ cups flour
- 3 cups sugar
- 1 Tbsp Pumpkin pie spice
- 2 tsp soda
- 1 ½ tsp salt
- ½ cup chopped walnuts
ANGEL HAIR PASTA SALAD

Cook pasta according to package directions; drain and rinse in cold water
- 1 package (7 ounces) angel hair pasta
- 4 plum tomatoes, seeded and chopped
- 1 cup thinly sliced carrots
- 1 medium cucumber, chopped
- 6 green onions, thinly sliced
- 2 tablespoons olive oil
- 2 tablespoons cider vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
