MEXICAN CHOCOLATE COOKIES

Preheat oven to 350 degrees
- 5 ounces bittersweet (60% cacao) chocolate, coarsely chopped
- 3/4 cup all-purpose flour
- 1/2 tsp cinnamon
- 1/4 tsp baking powder
- 1/4 tsp salt
- Dash of black pepper
- Dash of ground red pepper
- 1 1/4 cups sugar
- 1/4 cup butter, softened
- 1 large egg
- 1 tsp vanilla
Chicken Fried Rice

Beat the eggs lightly with chopsticks, add a dash of salt (Add a bit of oyster sauce if desired)
- Seasonings (add according to taste):
- 4 cups cold cooked rice
- 8 ounces cooked chicken (or substitute cooked turkey, etc.), chopped
- 2 eggs (more if desired)
- 1/2 cup green peas
- 1 medium onion, diced
- 1 green onion, diced
- Light Soy Sauce
- Oyster sauce
- Salt
- Pepper
- Oil for stir-frying, as needed
HOMEMADE BEEF GRAVY

Melt butter over medium heat in a small sauce pan
- 2 Tbsps butter
- 2 Tbsps flour
- 1 cup beef broth
- Fresh-ground black pepper
GRILLED SALMON STEAKS WITH LEMON-DILL SAUCE

In a small saucepan, melt butter over moderately high heat; remove from heat
- LEMON-DILL SAUCE
- 1 1/2 Tbsps butter
- 1 1/2 tsps cornstarch
- 1/2 cup cold water
- 1/3 cup freshly squeezed lemon juice
- 1 Tbsp snipped fresh dill
- 1/4 tsp salt
- 1/8 tsp dried chervil leaves
- Dash cayenne pepper
- 3 thin slices lemon, unpeeled, cut in quarters
- 4 center-cut salmon steaks; about 3/4 inch to 1 inch thick
- 2 whole lemons
- Dill sprigs (optional)
BLUEBERRY MUFFINS

In a large bowl, combine flour, sugar, baking powder and salt
- 1 3/4 cups all-purpose flour
- 1/3 cup sugar
- 2 1/2 tsps baking powder
- 1/2 tsp salt
- 1 cup fresh or unthawed frozen blueberries
- 3/4 cup milk
- 1 egg
- 1/3 cup melted butter
MEAT CABBAGE CASSEROLE

In a medium skillet, saute onion in butter until soft, but not brown
- 1 lb. lean ground meat
- 1 medium onion, chopped
- 2 Tbsps butter
- 1 cup finely shredded carrots
- 3 cups finely shredded cabbage

- 1 jar (16 oz) herb-style spaghetti sauce
