ZUCCHINI, BANANA & FLAXSEED MUFFINS

Preheat oven to 350 degrees
- Nonstick cooking spray
- 1 3/4 cups all-purpose flour (spooned and leveled)
- 1/2 cup ground flaxseed
- 1 cup lightly packed light-brown sugar
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon coarse salt
- 1 teaspoon ground cinnamon
- 1 1/2 cups coarsely grated zucchini (from 1 large zucchini)
- 1/3 cup mashed ripe banana (from 1 large banana)
- 3/4 cup whole milk
- 1 large egg, lightly beaten
- 1 teaspoon pure vanilla extract
CHOCOLATE TOFFEE CRUNCHIES

In a small bowl, combine the crumbs, brown sugar and butter
- TOPPING:
- 2 cups vanilla wafer crumbs (about 60 wafers)
- 1/4 cup packed brown sugar
- 1/2 cup butter, melted
- 1/2 cup butter
- 1/2 cup packed brown sugar
- 1 cup (6 ounces) semisweet chocolate chips
- 1/2 cup finely chopped pecans
LEMON MERINGUE PIE

Stir together 1 cup sugar and cornstarch in a 2-quart saucepan
- 1 cup sugar
- 1 1/2 cups cold water
- 1 lemon’s grated rind
- 1 tbsp butter
- 3 egg whites
- 3 Tbsp cornstarch
- 3 egg yolks, slightly beaten
- 1/4 cup lemon juice
- 1 baked 9" pie shell
- 1/3 cup sugar
APPLE-CINNAMON COOKIES

Preheat oven to 375 degrees
- 1 can (21 ounces) apple pie filling
- 1/2 cup butter, softened
- 1/2 cup granulated sugar, divided
- 1/4 cup firmly packed brown sugar
- 1 egg
- 1/2 tsp vanilla
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon, divided
OLD-FASHIONED PEANUT BUTTER COOKIES

Stir first 4 ingredients; set aside
- 2 1/2 cups unsifted flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 cup butter
- 1 cup sugar
- 1 cup firmly packed brown sugar
- 2 eggs
- 1 tsp vanilla
- 1 cup creamy or super-chunk peanut butter
BROCCOLI SHRIMP ALFREDO

Cook fettuccine according to package directions
- 8 ounces uncooked fettuccine
- 1 pound uncooked medium shrimp, peeled and deveined
- 3 garlic cloves, minced
- 1/2 cup butter, cubed
- 1 package (8 ounces) cream cheese, cubed
- 1 cup milk
- 1/2 cup shredded Parmesan cheese
- 4 cups frozen broccoli florets
- 1/2 teaspoon salt
- Dash pepper
ADOBO SAUCE

Add the water and half of the vinegar to a large pot
- 8 guajillo chiles, dried
- 8 ancho chiles,dried
- 6 garlic cloves
- 1 teaspoon cumin
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 tablespoon Mexican oregano
- 1/4 cup lemon juice
- 1/2 cup white vinegar
- 3/4 cup orange juice
- 1 medium onion, peeled and diced
- 2 tablespoons tomato paste
- 1/4 cup oil
- 1 jalapeno, seedes and diced (optional for added heat)
- 2 cups chicken or beef broth (depending on meat used)
- 1 teaspoon black pepper
- 12 cups of water
MACARONI BEEF STEW

Heat oil in Dutch oven over medium-high heat until hot
- 2 Tbsps oil
- 1 1/2 lb. beef stew meat, cut into 1-inch cubes
- 1 cup sliced celery
- 1/2 cup sliced onion
- 1 (14.5 oz) can whole tomatoes, undrained, cut up
- 2 1/2 cups water
- 1 tsp salt
- 1 tsp paprika
- 1/2 tsp chili powder
- 4 1/2 oz (1 cup) uncooked elbow macaroni
KELLY’S CHILI

Cook on simmer 1 hour or more
- Brown together:
- 3 lbs. hamburger
- 2 small onions
- Drain excess oil
- Then add:
- 4 – 14 1/2 oz. cans cut tomatoes
- 3 – 15 1/4 oz. cans dark red kidney beans
- 1 – 29 oz tomato sauce
- 1 – 6 oz can tomato paste
- Spices – Add after above is complete
- 1 tsp garlic – Refrigerator kind
- 1 T. cumin
- 3 T. chili powder
- 3/4 tsp. cayenne pepper
- 1/2 tsp. paprika
INDIVIDUAL MEAT LOAVES

- 1 Tbsp olive oil
- 3 cups chopped yellow onions
- 1 tsp chopped fresh thyme
- 2 tsps kosher salt
- 1 tsp pepper
- 3 Tbsps Worcestershire sauce
- 1/3 cup chicken broth
- 1 Tbsp tomato paste
- 2 1/2 pounds ground chuck
- 1/2 cup plain dry breadcrumbs
- 2 extra-large eggs, lightly beaten
- 1/2 cup ketchup
