CHICKEN AND RICE SOUP

Put chicken, onion, carrot and garlic in a large soup pot and cover with cold water
- 3 to 3 1/2 pounds chicken, cut up
- 1 medium onion, quartered
- 1 large carrot, sliced
- 2 cloves garlic
- 3 quarts water, about
- 1 tsp oregano leaves
- 3 Tbsps minced parsley
- 1 large bay leaf
- salt and pepper
- 1/2 cup brown rice
- 2 medium carrots, diced
- 1 medium zucchini, diced
- 1 cup each, peas and corn
LEMON-HERB ASPARAGUS

Snap off tough ends of asparagus
- 1 pound fresh asparagus spears
- 1/4 cup water
- 2 Tbsps butter
- 1/2 tsp dried whole basil
- 1 Tbsp grated parmesan cheese
- Lemon twists (optional)
POACHED CHICKEN (Great for chicken salad)

Place chicken in a large saucepan; add water and remaining ingredients and bring to a boil
- 4 skinless, boneless chicken breasts
- 1 1/2 cups water
- 1 cup sliced onion
- 1/2 cup Chablis or other dry white wine
- 1/2 cup sliced carrot
- 1/2 cup diced celery
- 10 black peppercorns
- 4 fresh parsley sprigs
- 4 fresh thyme sprigs
- 2 bay leaves

- 1/2 cup brown sugar
- 2 eggs
- 1 tsp vanilla
