CHEESEBURGER PASTA

Cook pasta according to package directions
- 1-1/2 cups uncooked whole wheat penne pasta
- 3/4 pound lean ground beef (90% lean)
- 2 tablespoons finely chopped onion
- 1 can (14-1/2 ounces) no-salt-added diced tomatoes
- 2 tablespoons dill pickle relish
- 2 tablespoons prepared mustard
- 2 tablespoons ketchup
- 1 teaspoon steak seasoning
- 1/4 teaspoon seasoned salt
- 3/4 cup shredded reduced-fat cheddar cheese
- Chopped green onions, optional
CHOCOLATE CHIP PUMPKIN MUFFINS

In a large bowl, combine the first seven ingredients
- 2 cups all-purpose flour
- 2-1/2 tsps baking powder
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 3/4 tsp salt
- 1/4 tsp baking soda
- Dash ground allspice
- 1 egg
- 3/4 cup packed brown sugar
- 3/4 cup canned pumpkin
- 2/3 cup milk
- 3 Tbsps butter, melted
- 1 tsp vanilla
- 1/2 cup miniature semisweet chocolate chips
ASPARAGUS-STUFFED CHICKEN ROLLS

In a large skillet, bring 1/2 in
- 8 fresh asparagus spears
- 2 boneless skinless chicken breast halves (5 ounces each)
- 1 tablespoon Dijon mustard
- 4 fresh sage leaves
- 2 slices provolone cheese (1 ounce each)
- 2 slices deli ham (3/4 ounce each)
- 1/4 cup all-purpose flour
- 1 egg, lightly beaten
- 1/2 cup dry bread crumbs
- 1/4 cup grated Parmesan cheese
- 1-1/2 teaspoons butter
- 1-1/2 teaspoons olive oil
- 1/4 cup white wine or chicken broth
CHEESE TORTELLINI

In a small skillet, cook sausage and beef over medium heat until no longer pink; drain
- 1/2 pound bulk Italian sausage
- 1/2 pound lean ground beef (90% lean)
- 1 jar (24 ounces) marinara sauce
- 1 can (14-1/2 ounces) Italian diced tomatoes
- 1 cup sliced fresh mushrooms
- 1 package (9 ounces) refrigerated cheese tortellini
- 1 cup (4 ounces) shredded Galbani® Part Skim Mozzarella Cheese
GARLIC SHRIMP & PASTA

In medium saucepan mix broth, garlic, parsley, cornstarch, lemon juice and pepper
- 1 can (14 1/2 oz) chicken broth (1 3/4 cups)
- 2 cloves garlic, minced
- 3 Tbsps chopped fresh parsley OR 1 Tbsp dried parsley flakes
- 2 Tbsps cornstarch
- 2 Tbsps lemon juice
- 1/8 tsp ground red pepper
- 1 pound medium shrimp, shelled & deveined
- 4 cups hot cooked thin spaghetti (about 8 ounces uncooked)

Mix the sugar, cornstarch or flour, cocoa and salt together
- 1 baked pie shell
- 1 cup sugar
- 1/2 cup cornstarch, or a little more flour than 1/2 cup
- 1/2 cup cocoa
- 1/4 tsp salt
- 1/2 cup milk
- 3 egg yolks
- 2 cups milk
- 1 tsp vanilla
CAMPBELL'S ONE-DISH CHICKEN & RICE BAKE

In 2-quart shallow baking dish mix soup, water, rice, paprika and pepper
- 1 can Campbell’s cream of mushroom soup
- 1 cup water
- ¾ cup uncooked regular long-grain rice
- ¼ tsp paprika
- ¼ tsp pepper
- 4 skinless, boneless chicken breast halves
CHILI MEAT SAUCE WITH LINGUINE

In a large skillet, heat the oil over medium-high heat
- A quick and easy meat sauce with a Tex-Mex twist. It goes well with long strands of pasta – linguine, spaghetti, vermicelli, or fettuccine.
- 1 Tbsp olive oil
- 1 large onion, chopped
- 12 ozs. Lean ground beef
- 1 jar (15 oz.) spaghetti sauce
- 1 can (15.5 oz chili-style chunky tomatoes
- 1 tsp ground cumin
- 1 cup frozen or canned whole kernel corn
- 4 medium size scallions, sliced thin
- 1 pound linguine, cooked and drained
- 1/3 cup grated Parmesan cheese
RAMEN SOUP WITH VEGETABLES

In a medium pot, heat oil over medium
- 1 tablespoon olive oil
- 1 medium yellow onion, diced medium
- 2 carrots, diced medium
- 1 stalk celery, diced medium
- 1/4 pound green beans, trimmed and cut into 1/2-inch pieces
- Salt and pepper
- 1 can (14.5 ounces) diced tomatoes
- 3 1/2 cups chicken broth
- 2 packages (3 ounces each) ramen, broken into quarters (seasoning packet discarded)
HOMEMADE ITALIAN SEASONING

Mix well and store in airtight container
- 1 teaspoon thyme
- 1 teaspoon oregano
- 1 teaspoon savory
- 1 teaspoon marjoram
- 1 teaspoon basil
- 1 teaspoon sage
- 1 teaspoon rosemary
