BASIL-SMOKED BURGER

Prepare a medium-hot fire in a charcoal grill with a cover
- Pesto Mayonnaise:
- 2/3 cup mayonnaise
- 2 Tbsps prepared basil pesto
- PATTIES:
- 2 pounds ground sirloin
- 1/4 cup Zinfandel
- 1/4 cup lightly packed minced fresh basil
- 1/4 cup fresh Italian bread crumbs
- 8 sun-dried tomatoes packed in olive oil, finely chopped
- 2 tsps garlic salt
- vegetable oil for brushing on the grill rack
- 8 large basil sprigs, moistened with water for grilling
- 6 large seeded sandwich rolls, split
- 6 slices Monterey Jack cheese
- 6 red leaf lettuce leaves
- 6 thick tomato slices, about 1/4 ich thick
- 6 paper thin red onion slices separated into rings
- 6 basil sprigs for serving
THE MIRAGE BREAD PUDDING

I got this recipe from the hostess at the Mirage Buffet when in Las Vegas in June 2002
- 14 eggs
- 1/2 tsp vanilla
- 2 3/4 cups sugar
- Mix together in medium size mixing bowl until sugar is dissolved. DO NOT WHIP.
- 1 1/2 qt Half-n-Half
- 1/2 qt. heavy cream
- Add liquids slowly [to first ingredients] until both are well blended.
- 6-8 sliced white bread - toasted
- 1/2 cup granulated sugar
- 2 Tbs. cinnamon powder
- 1 cup packed raisins
- Mix together in small bowl.
SHRIMP SCAMPI

In a 10-in. ovenproof skillet, saute garlic in butter and oil until fragrant
- 3 to 4 garlic cloves, minced
- 1/4 cup butter, cubed
- 1/4 cup olive oil
- 1 pound uncooked medium shrimp, peeled and deveined
- 1/4 cup lemon juice
- 1/2 teaspoon pepper
- 1/4 teaspoon dried oregano
- 1/2 cup grated Parmesan cheese
- 1/4 cup dry bread crumbs
- 1/4 cup minced fresh parsley
- Hot cooked angel hair pasta
ZUCCHINI SPICE CAKE

Combine first 8 ingredients in a bowl
- ¾ cup all-purpose flour
- ¾ cup whole wheat flour
- ¾ cup firmly packed brown sugar
- ¾ tsp baking soda
- ¼ tsp salt
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- 1/8 tsp ground cloves
- 1 cup shredded unpeeled zucchini
- ½ cup skim milk
- 2 Tbsps vegetable oil
- 1 tsp vanilla
- 1 egg
- ¼ cup toasted walnuts
CURRY CHICKEN

Preheat oven to 350 degrees
- 2-4 skinless, boneless chicken breast halves
- 2 Tbsps butter
- 1 onion, chopped
- 2/3 cup beer
- 1 can condensed tomato soup
- 1 tsp curry powder
- 1 tsp dried basil
- 1/2 tsp ground black pepper
- 1/4 cup grated Parmesan cheese
MAPLE-GLAZED CHICKEN

Very Good! Be sure to pound chicken for quick cooking
- 4 boneless skinless chicken breast halves (5 ounces each)
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 tablespoon canola oil
- 1/2 teaspoon cornstarch
- 1/2 cup apple cider or unsweetened apple juice
- 2 tablespoons maple syrup
- 1/2 teaspoon onion powder
ROASTED CAULIFLOWER

Preheat oven to 400°F (205°C)
- 1 head of cauliflower
- 2-3 cloves of garlic, peeled and coarsely minced
- 1 Tbsp lemon juice (or about half a lemon)
- Olive oil
- Coarse salt and freshly ground black pepper
- Freshly grated Parmesan cheese
MARINATED ZUCCHINI SALAD

In a large skillet, heat oil over medium-high
- 1/4 cup extra-virgin olive oil
- 1 small red onion, halved and thinly sliced
- 1/3 cup red-wine vinegar
- 1 tablespoon sugar
- Salt and pepper
- 6 medium zucchini, thinly sliced
SHERRY/APPLE PORK CHOPS

In a heavy skillet brown pork chops on both sides in a small amount of oil
- 6 thick pork chops
- 3 large apples, cored and sliced
- 1/4 cup brown sugar, firmly packed
- 1/2 tsp cinnamon
- 2 Tbsp butter
- salt and pepper to taste
- 1/2 cup sherry
BOURBON-ORANGE CHICKEN

Preheat a medium to large nonstick skillet over medium-high heat
- 2 Tbsps olive or vegetable oil
- 3 Tbsps butter, cut into small pieces
- 4 (6-ounce) boneless, skinless chicken breasts
- Salt and freshly ground black pepper
- 1/2 can frozen orange juice concentrate
- 1/4 cup whole smoked or roasted and salted almonds, chopped
- 2 shots (3 ounces) bourbon
