Okra Patties

Ingredients

  • 1 lb (3 cups)okra, chopped fine (I use food processor)
  • 1/2 cup onion, chopped fine
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup water
  • 1 egg
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • 1/2 cup cornmeal
  • Olive oil (and maybe a tad of bacon grease : )

Preparation

Step 1

Combine okra, onion, salt, pepper, water, and egg and mix well.

Mix flour, baking powder, and cornmeal and add to okra mixture, mixing well.

Heat oil to medium-high, drop okra by heaping tablespoons into hot oil and cook until brown on both sides. When you turn over, smash down a little with spatula.

This makes a lot; if you make half the recipe, it’s plenty for 4 people. I cook up all the patties, then put in fridge. Then reheat in skillet without additional grease. It crisps them up and makes them as good as when first cooked!
