Paleo Mahi with Lemon Butter

Ingredients

  • for the sauce:
  • for the fish
  • 4 Mahi Mahi Fillets
  • 1-2 tablespoons oil
  • 1-2 tablespoons butter
  • salt and pepper (I prefer white pepper with fish)
  • 1/2 cup white wine or stock i had stock.
  • 3 cloves garlic, crushed finely minced
  • juice of 3-4 lemons, between 1/3 and 1/2 cup
  • 2 tablespoons butter

Preparation

Step 1

Lightly salt and pepper the fish
In a large skillet heat the the oil and butter over medium high heat
Careful not to crowd the pan, cook the fish turning once, until the fish is just opaque throughout, 3 to 5 minutes per side. Transfer to a plate and keep warm. (I generally cook two at a time)
Once the fish all cooked, and removed to a plate, add the white wine or stock to the pan to deglaze and release stuck on flavor bits.
Add the garlic and stir until softened, then add the lemon juice, bring it up to a simmer, stir gently until it reduces by almost half. Stir in the butter until melted.
Turn off heat pour over fish
