Mexican Chicken Chili

Directions Sauté the chicken breasts in the olive oil in a large pot over medium/high heat
- 1 lb. chicken breast fillets (4 fillets)
- 1 Tbs. olive oil
- 10 C. water
- 2 C. chicken stock
- 1/2 C. tomato sauce
- 1 potato, peeled & chopped
- 1 small onion, diced
- 1 C. frozen yellow corn
- 1/2 carrot, sliced
- 1 celery stalk, diced
- 1 C. canned diced tomatoes
- 1 15 oz. can red kidney beans, plus liquid
- 1/4 C. diced canned pimento
- 1 jalapeno, diced
- 1/4 C. chopped Italian parsley
- 1 clove garlic, minced
- 1 1/2 tsp. chili powder
- 1 tsp. cumin
- 1/4 tsp. salt
- Dash cayenne pepper
- Dash basil
- Dash oregano
- Sour cream
- Pinch chopped Italian parsley
Raspberry Truffle Tart

Directions Heat oven to 375 degrees F
- Crust:
- 1 Pillsbury® refrigerated pie crust, softened as directed on box
- 1 egg white
- 2 tablespoons ground almonds
- Filling:
- 6 ounces semisweet baking chocolate, broken into pieces
- 1/4 cup butter
- 2 egg yolks
- 2 teaspoons raspberry-flavored liqueur (optional)
- 2 cups fresh raspberries
- Topping:
- 1/4 cup seedless raspberry jam
- 1/4 teaspoon almond extract
- 1 ounce semisweet baking chocolate
- 1 teaspoon vegetable oil
- 1/4 cup sliced almonds
- Mint leaves
Pineapple Upside Down Bread

Preheat oven to 350F Spray your Loaf pan with non-stick cooking spray or lightly butter the bottom & sides
- tsp salt For the Glaze & Topping::
- 4 Tbsp pineapple juice
- 2/3 cup all purpose flour
- 2 eggs
- 2/3 cup sugar
- 1 tsp baking powder
- 1/4 stick of butter
- 1/3 cup brown sugar
- 1-small can pineapple chunks-completely drained
- 8-10 maraschino cherries

- 2 (8 ounce) packages fat free cream cheese, softened
- 24 ounces salsa
Key Lime Pie

Directions Preheat oven to 350 degrees
- Pie:
- 14 oz milk (sweetened/condensed)
- 4 egg yokes
- 1 Tbs. Cream of Tartar
- 4 oz. Key lime juice
- 1 9" in. graham cracker pie crust
- Topping:
- 2 C. Key lime juice
- 3/4 lb. Sugar
Cinnamon Roll Waffles

Whisk together flour, sugar, baking powder, soda, and salt in a large mixing bowl
- Waffles
- 2 1/2 cups flour
- 2 Tbsp sugar
- 1 1/4 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/4 cups buttermilk
- 3 Tbsp butter, melted
- Filling
- 2/3 cup brown sugar
- 1 Tbsp cinnamon
- 1/8 tsp salt

- 2/3 cup powdered sugar
- 2 tsp butter, melted

Panera Broccoli Cheese Soup

Sauté onion in butter. Set aside
- 1 tablespoon melted butter
- 1⁄2 medium chopped onion
- 1⁄4 cup melted butter
- 1⁄4 cup flour
- 2 cups half-and-half cream
- 2 cups chicken stock
- 1⁄2 lb fresh broccoli (chopped into bite size pieces)
- 1 cup carrot, julienned, grated
- 1⁄4 teaspoon nutmeg
- 8 ounces grated sharp cheddar cheese
- salt and pepper
- crusty bread or bread bowl
- 2 cups whole milk
