Preheat oven to 375F. Place chicken breasts on a cutting board and using a sharp knife, slice in half lengthwise
- Yields: 6 servings
- 3 chicken breasts
- 2 eggs
- 1 cup parmesan cheese, shredded
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
- 3/4 cup of your choice of sauce
- 8 oz fresh mozzarella
- Olive oil or cooking spray
- Fresh parsley or basil to garnish

- 1 tsp black pepper
- 2 tablespoons olive oil
- 1/2 tsp brown sugar

- 1/3 cup grated parmesan cheese (or shredded, the fresh kind, not the powdered type)
- 1/2 teaspoon black pepper
- 2 teaspoons paprika (or garlic powder, whatever your preference)
- 3 egg whites (beaten)
