Lemonade Pie Cookies

1 Heat oven to 350°F. Line cookie sheet with cooking parchment paper
- 1 egg
- Splash water
- 1 box Pillsbury™ refrigerated pie crusts, softened as directed on box
- 1 jar (10 oz) lemon curd
- 1/2 cup sugar
Chicken Chili

Lightly coat an unheated medium skillet with nonstick cooking spray
- Nonstick cooking spray
- 8 ounces skinless, boneless chicken breast halves, cut into 1-inch pieces
- 1 15 ounce can white kidney beans (cannellini beans) or Great Northern beans, rinsed and drained
- 1 1/4 cups reduced-sodium chicken broth
- 1/4 cup chopped onion
- 1/3 cup chopped green sweet pepper
- 1/2 of a small fresh jalapeno chile pepper, seeded and finely chopped*
- 1/4 teaspoon ground cumin
- 1/4 teaspoon dried oregano, crushed
- 1/8 teaspoon ground white pepper
- 1 clove garlic, minced
- 2 tablespoons chopped tomato (optional)
- 2 tablespoons sliced green onion (optional)
- 2 tablespoons shredded Monterey Jack cheese (1 ounce) (optional)
Lobster Bisque

In a large, heavy pot over medium heat, heat butter
- 4 tbsp. butter
- 1 medium onion, finely chopped
- 2 carrots, peeled and finely chopped
- 2 stalks celery, finely chopped
- Kosher salt
- Freshly ground black pepper
- 2 cloves garlic, minced
- 2 tbsp. tomato paste
- 2 tbsp. all-purpose flour
- 4 c. seafood or fish stock
- 1 1/4 c. dry white wine
- 1 bay leaf
- 3 sprigs fresh thyme
- 1/2 c. heavy cream
- 1 lb. cooked lobster meat, chopped
- Finely chopped chives
Cheddar Scalloped Potatoes

Use a big pot. Saute chopped onions in margarine til soft but not browned
- 1⁄2 onion, chopped
- 4 tablespoons margarine
- 4 tablespoons flour
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 2 cups milk
- 1⁄2 cup half-and-half
- 6 cups potatoes, peeled and sliced
- 2 cups cheddar cheese, shredded
