Clean Eating Blueberry Crumb Bars

- Crust:
- 2 cups quick oats
- 1 1/4 cups whole wheat flour
- 1/2 cup maple syrup or coconut palm sugar
- 1/2 tsp baking powder, aluminum free
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1 egg, large
- 1/2 cup coconut oil, room temperature (not melted)
- 1/4 cup applesauce, unsweetened (1/2 cup if using coconut palm sugar)
- Cooking spray (I use Misto)
- Blueberry Filling:
- 3 cups blueberries (if using frozen thaw in hot water & drain)
- 2 tbsp maple syrup or coconut palm sugar
- 1 orange or lemon, zest of (can also add a bit of juice)
- 1 tbsp cornstarch
- 1 tsp pure vanilla extract
Skinny Queso Dip

In a small bowl, whisk together 1/4 cup of the milk with 3 tbsp of cornstarch to create a slurry; set aside
- 1 cup skim milk
- 3 tbsp cornstarch
- 1 tsp canola oil
- 1 cup minced onion
- 3 garlic cloves, minced
- 1 poblano pepper, diced
- 1-2 jalapeños, seeded and diced
- 1/2 cup low sodium chicken broth
- 10 oz can Rotel tomatoes with chiles, diced and drained
- 1/4 cup fresh cilantro, chopped
- juice of 1 lime
- salt and black pepper, to taste
- 1/2 tsp ground cumin
- 1 tsp ancho chili powder
- 1 3/4 cups shredded reduced fat sharp Cheddar, Sargento
Quinoa Falafel with Tahini Sauce

Cook quinoa as per package instructions and set aside
- Falafel:
- 2 cups quinoa, dry
- 2 x 14 oz cans chickpeas, drained & rinsed (I cook my own beans)*
- 1 medium onion, cut into big chunks
- 8 garlic cloves, large
- 2 cups parsley, packed
- 3 1/2 tsp salt*
- 4 tsp cumin
- 2 tsp coriander, ground
- 4 tbsp sesame oil
- 2 tbsp cornstarch
- 1/2 cup water
- Cooking spray (I use Misto)
- Tahini Sauce:
- 1 cup water
- 1 cup tahini
- 1 garlic clove, large**
- 1/4 tsp salt
- Some Falafel mixture
Asian Beef Lettuce Wraps

Gently rinse lettuce leaves and pat dry, careful not to tear them
- 12 leaves lettuce (iceberg, romaine, Boston or green leaf)
- 1 tablespoon vegetable oil
- 1 red bell pepper, seeded and diced
- 1 yellow onion, diced

- 1/4 tsp. each salt and pepper
- 2 garlic cloves, minced
- 1 tablespoon soy sauce
- 1/4 cup hoisin sauce
- 1-2 Tbsp. chili sauce (such as Sambal Oelek*)

- 1 tablespoon rice wine vinegar
- 1/2 Tablespoon honey
- 4 green onions, chopped

Combine all ingredients in a bowl and mix well to combine
- 1 (17 ounce) container 2% Greek yogurt
- 3 tablespoons mayonnaise
- 1 tablespoon agave nectar
- 1 cup finely chopped kale
- 1 cup finely chopped spinach

- 1/3 cup water chesnuts, finely minced

- 1 1/4 cup salsa
- 1 6 ounce container plain greek yogurt
- 1 quart cherry tomatoes, halved
- 1 red onion, chopped
- 2 cans black beans, drained and rinsed
- 1 12 ounce package frozen corn, thawed
- 2 avocados, peeled and chopped
- 5 ounce block pepper jack cheese, cut into small cubes
- 4-5 cups chopped romaine lettuce
- 1/4 cup or more chopped cilantro (optional)
