Stir-Fried Pumpkin

1. Heat the oil in a large skillet
- 3 - 3 tablespoons olive oil
- 1/2 - 1/2 cup chopped onion
- 1 - 1 teaspoon minced garlic
- 4 - 4 cups cubed fresh pumpkin
- 1/2 - 1/2 cup grated carrot
- 2 - 2 tablespoons soy sauce
- 1 - 1 teaspoon salt
- 1 - 1 teaspoon ground black pepper
- 2 - 2 teaspoons black sesame seeds
Barbecued Chicken sandwiches

In a 3-qt. slow cooker or Dutch oven, combine all ingredients except buns
- 2 broiler/fryer chicken (3 to 3-1/2 pounds each), cooked and shredded
- 1 large onion, chopped
- 2 cups water
- 1-1/4 cups ketchup
- 1/4 cup packed brown sugar
- 1/4 cup Worcestershire sauce
- 1/4 cup red wine vinegar
- 1 teaspoon each salt, celery seed and chili powder
- 1/4 teaspoon hot pepper sauce
- Hamburger buns
Shrimp Linguine

1. Cook linguine according to package directions, but do not add salt
- 1 - 1 lb linguine
- 1 - 1 cup reduced-sodium chicken broth
- 2 - 2 tablespoons fresh lemon juice
- 1 - 1 bay leaf
- 1 - 1 lb shrimp, peeled and deveined
- 1 - 1 tablespoon olive oil
- 1 - 1 small yellow onion, chopped
- 3 - 3 cloves garlic, minced
- 1 - 1 teaspoon no-salt added tomato paste
- 1/4 - 1/4 teaspoon black pepper
Slow-Cooked Broccoli

In a large bowl, combine broccoli, soup, 1 cup cheese, onion, Worcestershire sauce and pepper
- 6 cups frozen chopped broccoli, partially thawed
- 1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
- 1-1/2 cups (6 ounces) shredded sharp cheddar cheese, divided
- 1/4 cup chopped onion
- 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon pepper
- 1 cup crushed butter-flavored crackers (about 25)
- 2 tablespoons butter
Crockpot Tuna Casserole

Grease bottom and sides of slow cooker
- 2 cans cream of celery soup
- 1/3 cup chicken broth
- 2/3 cup milk
- 2 tablespoons parsley flakes
- 1 package (10 ounces) frozen peas, thawed
- 2 (7 ounces each) cans tuna, well drained
- 10 ounces medium egg noodles, cooked until just tender
- 3 tablespoons buttered bread crumbs or potato chip crumbs
Tuna Cauliflower Bake

Place the cooked cauliflower in a buttered 1 1/2 quart shallow baking dish; layer tuna over the cauliflower
- 2 packages (10 ounces each) frozen cauliflower, about 4 cups cut up cauliflower, cooked and drained
- 2 cans (7 ounces each) tuna, drained and flaked
- 1/4 cup butter
- 1/4 cup chopped green pepper
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1 3/4 cups milk
- 1/4 cup chopped pimiento
- 1 cup shredded Cheddar cheese
Chocolate mug cake

Add dry ingredients to mug, and mix well Add the egg and mix thoroughly
- 4 tablespoons cake flour (that's plain flour, not self-raising)
- 4 tablespoons sugar
- 2 tablespoons baking cocoa
- 1 egg
- 3 tablespoons milk
- 3 tablespoons oil
- 3 tablespoons chocolate chips(optional)
- a small splash of vanilla essence
- 1 coffee mug
Slow-Cooked Mac 'n' Cheese

Cook macaroni according to package directions; drain
- 1 package (16 ounces) elbow macaroni
- 1/2 cup stick margarine, melted
- 2 eggs, beaten
- 1 can (12 ounces) evaporated milk
- 1 can (10-3/4 ounces) condensed cheddar cheese soup, undiluted
- 1 cup milk
- 4 cups (16 ounces) shredded cheddar cheese, divided
- 1/8 teaspoon paprika
Honey-Glazed Ham

1. Cut the ham in half; place in a 5 qt slow cooker
- 1 Boneless fully cooked ham (4 pounds)
- 1 1/2 cups ginger ale
- 1/4 cup honey
- 1/2 tsp ground mustard
- 1/2 tsp ground cloves
- 1/4 tsp ground cinnamon
- Sour cream, optional
FORGOTTEN COOKIES

1. Preheat oven to 250 degrees
- 4 EGGWHITES @ ROOM TEMPERATURE
- 1/4 tsp salt
- 1 tsp vanilla
- 3/4 cup sugar
- 12 oz (2 cups) miniature bittersweet chocolate chips
- 1 cup chopped shelled pecans (optional)
