CLAM CHOWDER, 4 CUP, MAKES APPROX 10 QUARTS

This recipe is good for a large group, 35 - 40 people and can easily be cut in half, last time I made it ,
- 1 - 50 OUNCE CAN CAMPBELL'S CONDENSED CREAM OF MUSHROOM SOUP
- 1 - 50 OUNCE CAN WATER
- 2 - 28 OUNCE CANS POLAR CLAMS ( MEAT AND WATER SEPARATED )
- 4 CUP RED POTATOES DICED
- 4 CUP RED ONIONS DICED
- 4 CUP CELERY DICED
- 4 - 6 CUP FROZEN CARROTS AND PEAS
- 4 CUP LA VICTORIA THICK AND CHUNKY SALSA
- 4 TBSP EXTRA VIRGIN OLIVE OIL
- 4-6 TBSP MINCED GARLIC
- SALT AND PEPPER TO TASTE
CAVE MAN RUB

- 4 tbsp smoked paprika
- 2 tbsp sea salt
- 3 tbsp chili powder
- 1 tbsp cumin
- 1 tbsp ground black pepper

- ORANGE JUICE CURE I
- 1 GAL. ORANGE JUICE
- 3 OZ INSTA CURE # 1
- 2 CUP BROWN SUGAR
- 4 TBSP ONION POWDER
- 4 TBSP GARLIC POWDER
- 3 TBSP GROUND PEPPER
- 1 TBSP NUTMEG
- 1 TBSP GROUND CLOVES
SWEET AND SOUR CABBAGE SOUP

1. Heat oil in a large soup pot over medium heat
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 2 garlic cloves, minced
- 2-3 tablespoons brown sugar
- 1 head of finely shredded green cabbage
- 16-ounce can crushed tomatoes
- 2-3 tablespoons cider vinegar or lemon juice
- 6 cups chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
MEMPHIS STYLE PULLED SMOKED SIRLOIN ROAST

MEMPHIS SIRLOIN PULLED ROAST
- 10 -15 LB SIRLOIN ROAST
- MEMPHIS RUB
- 1/2 cup paprika
- 1/4 cup garlic powder
- 1/4 cup mild chili powder (use medium or hot to kick up the heat)
- 3 tablespoons salt
- 3 tablespoons black pepper
- 2 tablespoons onion powder
- 2 tablespoons celery seeds
- 1 tablespoon brown sugar
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- 3 teaspoons cumin
- 2 teaspoons dry mustard
- 2 teaspoons ground coriander
- 2 teaspoons ground allspice

- replace maple syrup with a mix of maple syrup and molasses

- 2 carrots, finely chopped
- 2 stalks celery, finely chopped
- 1 small red bell pepper, diced
- 1 small onion, finely chopped
- 4 cloves garlic, minced

- 1 (8.75 ounce) can no-salt-added sweet corn, drained
- 1 (15 ounce) can no-salt-added sweet peas, drained
- 5 1/2 cups chicken broth
