- 1 pound boneless pork shoulder
- 1 clove garlic, crushed
- 1 onion, cut into 4 wedges
- 1 carrot, peeled and cut into 1 inch pieces
- 1 celery, cut into 1 inch pieces
- 1 tomato, chopped
- 1 tablespoon chili powder
- 1 teaspoon salt
- 1/4 teaspoon cumin
- 1/4 teaspoon dried oregano
- 1/4 teaspoon pepper
- 1 bay leaf
Crockpot Fajitas

- 2 pounds Meat; cooked thinly sliced
- 2 medium Red Peppers; Sliced
- 1 medium Green Pepper; sliced
- 1 Medium Yellow Pepper; Sliced
- 1 Large Onion or 2 medium; Sliced into strips
- 1/2 Cup Each Soysauce, Chicken Stock; Any stock will work or water
- 4 Tbl Lemon Juice
- 4 Tbl Sugar
- 3 Cloves Garlic
- 1 Pkg Taco or Fajita Seasoning Mix
- 2 Tbl corn starch; dissolved in 1/4 C. water
- 6 8 inch Flour tortillas

1. Combine all ingredients in a medium saucepan over high heat and whisk until smooth
- 1 c water
- 3/4 c light corn syrup
- 1/2 c tomato paste
- 2/3 c vinegar
- 1/3 c dark brown sugar
- 3 T molasses
- 1 1/4 t liquid smoke
- 1 t salt
- 1/4 t onion powder
- 1/4 t black pepper, Ground
- 1/4 t mustard, Ground
- 1/8 t paprika
- 1/8 t garlic powder
- dash cayenne
