Pineapple Margarita

Using a blender or food processor, blend pineapple chunks into a smooth purée
- 1 cup fresh (or frozen - thawed) pineapple chunks
- 1 ounce (2 tablespoons) fresh-squeezed lime juice
- 1 ounce (2 tablespoons) fresh-squeezed orange juice
- 1/8 to 1/4 cup superfine sugar (*see Notes)
- 2 ounces (1/4 cup) good-quality tequila (preferably silver)
- 1 1/2 ounces (3 tablespoons) orange liqueur (such as triple sec or Cointreau)
- Ice
- 1 tablespoon Kosher salt
- 1 tablespoon coarse/sparkling sugar
- Lime wedges & pineapple chunks for garnish, if desired

- 1/2 Lb. Pork Tenderloin (cut Into Bite Size Pieces)

- 2 Stalks Scallions (only the White Part, cut into 2 inch length)
- 1 Piece Fresh/canned Pineapple Ring (cut Into Small Pieces)
- 1 Clove Garlic (finely Chopped)
- Oil for Frying
- 1 Teaspoon Soy Sauce
- 1/2 Teaspoon Corn Flour
- 1/2 Teaspoon Rice Wine
- Frying Batter:
- 1/2 Cup Water
- 2 Oz. All-purpose Flour
- 1 Oz. Corn Starch
- 1/2 Teaspoon Baking Soda
- 1/2 Egg
- 1 Teaspoon Cooking Oil
- 1 Small Pinch of Salt
- Sweet and Sour Sauce:
- 1 1/2 Tablespoons Tomato Ketchup
- 1 Teaspoon Plum Sauce
- 1/8 Teaspoon Chinese Rice Vinegar (transparent in Color)
- 1/2 Teaspoon Lea & Perrins Worcestershire Sauce
- 1 Teaspoon Oyster Sauce
- 1 Teaspoon Corn Starch
- 1 Teaspoon Sugar
- 2 Tablespoons Water
Grilled Pineapple Salsa

Store the salsa in the fridge for up to 5 days
- 1 Large Pineapple, cored, skin and stems removed – cut into 4 or 5 very large pieces
- 1/3 A Large Red Onion, finely diced
- 1 Small Jalapeno Pepper, seeded and minced
- Juice of 2 Small Limes
- 1/2 Cup Chopped Cilantro Leaves
- 1 Tsp. Salt

- 60 g (2.1oz) Plain Flour
- 3 Tablespoons Milk
- 2 Large Apples
- 1 Teaspoon Rum

Heat your oil in a skillet over medium high heat
- 1 Tbsp. of olive oil
- 1 small onion, diced
- 3 cloves of garlic, minced
- 1 lb. of ground beef
- Salt and pepper to taste
- 8 oz. of Farfalle (bowtie) pasta, cooked to al dente, as per the instructions on the box

- 1/2 cup of water
- 2/3 cup of ricotta cheese
