Slice about 3 cups of the strawberries into quarters and place them in a medium bowl
- 1 9-inch pie crust, baked
- 2 pounds fresh strawberries, rinsed and hulled
- 1/2 cup granulated sugar
- 2 1/2 teaspoons cornstarch
- 1 1/2 teaspoons lemon juice, freshly squeezed
- 1/8 teaspoon salt
- 1 envelope unflavored powdered gelatin
- 2 tablespoons cold water
"Pecan, Rum and Brown Sugar Keeping Cake"

For the cake: Preheat oven to 325F
- For the cake:
- 3 cups all-purpose flour
- 3/4 tsp baking powder
- 1/4 tsp baking soda
- 1 tsp salt
- 1 tsp freshly grated nutmeg

- For the rum syrup:
- 1/4 sugar
- 1/4 cup + 2 tbsp water
- 1/2 cup dark rum
- 3/4 tsp vanilla extract

- 2 1/4 cups sugar
- 1 cup unsalted butter, melted

- For the pecan pie topping:
- 1 stick (1/2 cup) unsalted butter
- 1 cup packed light brown sugar
- 1/3 cup honey
- 2 tablespoons heavy cream
- 2 cups pecans (whole or chopped)

Roasted Red Pepper Pimento Cheese

- 4 cups of shredded sharp cheddar cheese
- 1/4 cup of grated Vidalia or other sweet onion
- 4 ounces of roasted red peppers, chopped
- 1/2 cup of mayonnaise
- 1/4 cup of buttermilk
- 1 teaspoon of spicy mustard (like Emeril's)
- 1/4 to 1/2 teaspoon of Slap Ya Mama, or your favorite
- Cajun/Creole seasoning, or to taste
- Couple dashes of hot sauce
- Kosher salt and freshly cracked black pepper, to taste
