Chicken Bacon Alfredo

Preheat oven to 375. Fry (or microwave) bacon until crispy, allow to cool
- 4 each skinless boneless chicken breasts
- 1 cup olive oil
- 1 cup Progresso Italian Bread Crumbs
- 3 tablespoon Mayonnaise
- 1 cup Colby or Jack Cheese shredded
- 1 tablespoon Parmesan
- 1 tablespoon Fresh parsley chopped
- 6 slices Bacon
- 1 cup Alfredo sauce
- Salt and pepper to taste
Classic Beef Stroganoff

1. Cut up any large pieces of meat
- 1 1/4 pounds beef stew meat
- 2 T vegetable oil
- 2 1/2 cups sliced fresh mushrooms
- 1/2 cups sliced green onions (4) or chopped onion (1 medium)
- 1 bay leaf
- 2 cloves garlic
- 1/2 t dried oregano, crushed
- 1/4 t. salt
- 1/4 t. dried thyme, crushed
- 1/4 t. ground back pepper
- 1 1/2 cups beef broth
- 4 cups dry sherry
- 1 8-ounce carton sour cream
- 1/3 cup flour
- 1/4 cup water
- Sauteed zucchini noodles hot cooked pasta Fresh basil for garnish
Spiced Bacon

Read all instructions. The bacon is baked on one side first before adding seasonings
- Maple Chile:
- 6 slices thick-cut bacon
- 1/4 cup maple syrup
- 2 T each brown sugar and chile powder
- Pie Spice:
- 1/3 cup brown sugar
- 1 1/2 t. pumpkin pie spice
- 1 t. water
- Cumin-Peppercorn:
- 1/4 cup brown sugar
- 1 t. water
- 1 t. each cumin seeds, coriander seeds and pink peppercorns
Chicken Breast Parmesan Rollatini

Position a rack in the upper third of the oven and preheat to 450 degrees F
- 1 cup fat-free low-sodium chicken broth
- 1 clove garlic, thinly sliced
- 1 14.5-ounce can crushed San Marzano or fire-roasted tomatoes 5 or 6 fresh basil leaves, torn into small pieces
- Kosher salt and freshly ground pepper
- 4 thin (1/8-inch-thick) chicken cutlets (4 ounces each)
- 1/4 cup chopped fresh parsley
- 6 ounces shredded part-skim mozzarella cheese (about 1 cup)
- 1/4 cup grated parmesan cheese
- 1/4 cup breadcrumbs
- 1 large egg white
- Cooking spray
- Instant polenta, for serving (optional)
