Chicken Spiedini

Use with metal or wooden skewers
- 4 boneless, skinless chicken breasts (6 oz each)
- 1/2 cup fresh lemon juice
- 1/4 cup diced mild banana peppers
- 2 T each minced garlic and lemon zest
- 1 T honey
- 2/3 cup panko crumbs
- 1/4 cup grated Parmesan
- 1/2 t. red pepper flakes
- 1 medium red onion, halved and thinly sliced
- 8 oz. cremini mushrooms, sliced
- 1 T. extra virgin olive oil
- 1 cup halved cherry tomatoes
- black pepper to taste
Forever Crisp Dill Pickles

Soak freshly picked cucumbers in a tub of ice water overnight
- 4 lbs. cucumbers
- 2 cloves of garlic for each jar, peeled
- 1 0r 2 fresh sprigs of dill for each jar
- 4 or 5 black peppercorns for each jar
- 1 small fresh hot cayenne pepper for each jar (optional)
- 2 quarts of water
- 2 quarts of white vinegar
- scant 1/2 c. canning salt
Lettuce Wraps

Great for appetizers or meal
- 3 tablespoons lime juice (from about 4 limes)
- 1 tablespoon fish sauce
- 1 tablespoon plus 1 teaspoon soy sauce
- 2 teaspoons light brown sugar
- 1/3 cup fresh cilantro leaves, roughly chopped, plus more for serving
- 3 scallions, thinly sliced
- 1 small red jalapeno or Fresno chile, thinly sliced
- 1/2 cup low-sodium chicken broth
- 1 pound ground pork or chicken
- 1 tablespoon grated ginger
- 2 cloves garlic, minced
- I large head Bibb or romaine lettuce, separated into 15 large leaves
- Chopped roasted salted peanuts, for serving
- Shredded carrots, for serving
Double Chocolate Peanut Butter Thumbprint Cookies

Preheat oven to 350 degrees
- 1 1/2 cups all-purpose flour
- 1/3 cup Baking Cocoa
- 1 1/2 t. baking powder
- 1/4 t. salt
- 2 cups (12 ounce package) Semi-Sweet Chocolate Chips, divided
- 1 cup granulated sugar
- 1 cup chunky or smooth peanut butter, divided
- 1/3 cup butter softened
- 1 1/2 t. vanilla
- 2 large eggs
Derby Tassies

Preheat oven to 350°. Line a baking sheet with foil
- 1/2 C. dark corn syrup
- 1/3 C. sugar
- 2 T. unsalted butter, softened
- 1/8 t. salt
- 3 (1.9 oz.) pkgs. frozen mini phyllo shells, thawed
- 3 T. bourbon
- 2 large eggs, lightly beaten
- 3/4 C. chopped pecans or walnuts
- 1/3 C. mini semi-sweet chocolate morsels

Grilled Stuffed Pork Tenderloin

Pounding the butterflied roast before stuffing allows the meat to be tightly rolled, not folded around the filling
- For stuffing:
- 1 slice hearty white sandwich bread , torn into 1/2-inch pieces
- 3/4 cup piquillo pepper s, rinsed and patted dry
- 2 ounces Manchego cheese , shredded (1/2 cup)
- 1/4 cup pine nuts, toasted
- 2 garlic cloves , minced
- 1 teaspoon minced fresh thyme
- 1/2 teaspoon smoked paprika
- Salt and pepper
- For pork tenderloin:
- 4 teaspoons packed dark brown sugar
- 2 1/4 teaspoons kosher salt
- 1 1/4 teaspoons pepper
- 2 (1 1/4 to 1 1/2-pound) pork tenderloins , trimmed
- 1 recipe stuffing (see related recipes)
- 1 cup baby spinach
- 2 tablespoons olive oil

- 2 1/2 cups plain animal crackers
- 2 1/2 cups pretzel sticks
- 1/2 cup firmly packed brown sugar
- 1/4 cup granulated sugar
- 2/3 cup dry milk powder
- 3/4 cup butter, melted
- 1 bag (12.6 ounces) M and M's
- 1 bag (7.5 ounces) gummy bears

For the beef rolls: Coat a large saute pan with olive oil, add the pancetta and bring the pan to a medium heat
- Stuffing:
- Extra-virgin olive oil
- 1/2 cup finely diced pancetta
- 1 large onion, finely diced
- Kosher salt
- Pinch crushed red pepper flakes
- 2 cups day old Italian bread, crusts removed, cut into 1-inch chunks
- 1 cup milk
- 2 cloves garlic, smashed and finely chopped
- 1/2 pound button or cremini mushrooms, sliced
- 1/2 pound spinach, stems removed and cut into chiffonade
- 1/2 cup toasted pine nuts
- 1/2 cup grated provolone
- 1/2 cup grated Parmigiano-Reggiano
- 2 pounds top round, cut into 1/2-inch thick slices (about 12)
- Sauce:
- Extra-virgin olive oil
- 1 large onion, finely diced
- Pinch crushed red pepper flakes
- Kosher salt
- 2 cloves garlic, smashed and finely chopped
- 4 tablespoons tomato paste
- 1 cup red wine
- 1 (32-ounce) can San Marzano tomatoes, passed through the food mill
- 2 cups water
- Grated Parmigiano-Reggiano, for garnish

- 24 Frozen dinner rolls
- 1/2 cup butter
- 1/2 cup brown sugar, or more to taste
- 1/2 cup pecans
- 1 (3.5) ounce package of cook and serve butterscotch pudding
- 1/4 cup white sugar
- 1 t cinnamon
- 1/2 cup light corn syrup
