- 1 1/2 cups uncooked penne pasta (5 oz)
- 1/2 lb bulk Italian pork sausage
- 1 medium onion, chopped (1/2 cup)
- 1 teaspoon dried oregano leaves
- 1/2 teaspoon Cajun seasoning
- 1 cup vegetable juice
- 1 can (15 to 16 oz) chili beans in sauce, undrained
- 1 can (14.5 oz) zesty chili-style diced tomatoes, undrained
Pumpkin Cupcakes with Cream Cheese Frosting

To Make the Cupcakes: 1. Preheat oven to 350°F
- For the Cupcakes:
- 4 cups cake flour (not self-rising), sifted
- 1 teaspoon baking soda
- 1 Tablespoon + 1 teaspoon baking powder
- 1 teaspoon salt
- 2 teaspoons ground cinnamon
- 1 Tablespoon ground ginger
- 1 teaspoon freshly grated nutmeg
- ¼ teaspoon ground cloves
- 1 cup (2 sticks) unsalted butter, room temperature
- 2 ½ cups packed light-brown sugar
- 4 large eggs
- 1 cup buttermilk
- 1 ½ cups canned pumpkin (not pie filling)
- For the Cream Cheese Frosting:
- 1 cup (2 sticks) unsalted butter, room temperature
- 12 ounces cream cheese, room temperature
- 1 pound (4 cups) confectioners’ sugar, sifted
- ¾ teaspoon vanilla extract

Heat broth, onion and frozen broccoli to boiling in 3-quart saucepan
- 2 cups chicken broth
- 1/3 cup chopped onion
- 1 package (10 ounces) frozen chopped broccoli
- 1 1/3 cups mashed flakes potatoes (dry)
- 2 cups cut-up cooked chicken
- 2 cups shredded Swiss cheese (8 ounces)
- 2 cups milk
- 1/2 teaspoon salt
