- 1 1/4 pounds chicken, breast, boneless, skinless
- 2 large egg(s)
- 1/2 cup(s) bread crumbs, whole-wheat, coarse, dried
- 1/2 cup(s) flour, whole-wheat
- 1/2 teaspoon salt
- 1/4 teaspoon pepper, black ground
- 2 tablespoon oil, olive, extra-virgin
- 1 medium lemon
- cut into wedges
Sweet Yellow Tomato Pasta Sauce Over Spaghetti With Pancetta Recipe

Chop the tomatoes, pancetta, shallots, and scallions
- 8 medium yellow tomatoes diced
- 2 tablespoons minced garlic
- 1/4 teaspoon or a dash of red pepper flakes to taste
- 2 tablespoons fresh basil chopped
- 2 tablespoons fresh parsley (1 for the sauce; 1 for a garnish
- 1/2 teaspoon sugar
- Salt and pepper to taste
- 3 tablespoons olive oil (2 to saute the tomatoes, and 1 to saute the pancetta and shallots)
- 1 lb whole wheat pasta, I like just spaghetti, but use your favorite
- 1 cup of chopped pancetta
- 2 large shallots diced fine
- 1 cup chicken broth
- 2 scallions diced fine
Salmon Burgers

In a medium bowl, combine peppers, panko, garlic, and salmon
- 1/2 cup red bell pepper, diced
- 1/2 cup yellow bell pepper, diced
- 3/4 cup panko
- 2 cloves garlic, minced
- 2 pounds salmon fillets, skinned and finely chopped
- 1 large egg, lightly beaten
- 1 tablespoon soy sauce
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon salt
- Cooking spray
- Sesame Mayonnaise, recipe follows
- 8 buttered and toasted sandwich buns
- 8 lettuce leaves

Chinese Chicken Salad

Combine cabbage, green onions, and chicken in one bowl
- 6 cups shredded cabbage
- 3 green onion chopped
- 2 to 3 cups shredded chicken

- 1 pkg Top Ramen noodles
- 1/3 cup sliced almonds
- 3 T. sesame seeds

Instructions Preheat the oven to 350ºF
- Ingredients
- 1 ⁄4 cup whole almonds plus 2 tablespoons sliced almonds
- 1 ⁄4 teaspoon ground cinnamon
- 1 ⁄4 teaspoon freshly ground nutmeg
- 1 tablespoon trans-fat-free margarine
- 2 cups sliced strawberries
- 1 cup blueberries
- 1 tablespoon granular sugar substitute
- 6 tablespoons part-skim ricotta cheese
Pasta Caprese

- 1/3 cup extra-virgin olive oil
- 1/4 cup fresh lemon juice
- 1 shallot, minced
- 1 small clove garlic, minced
- Kosher salt and freshly ground pepper
- 1 teaspoon sugar (optional)
- 2 pounds mixed heirloom tomatoes, cored, seeded and cut into 1/2-inch pieces
- 1 pound pasta, such as campanelle, penne or fusilli
- 12 ounces fresh mozzarella cheese, cut into 1/2-inch pieces

- 2 teaspoons dried oregano

- 2 cups nonfat cottage cheese
- 1/2 cup (1 ounce) finely grated fresh Parmesan cheese
- 1 (15-ounce) container nonfat ricotta cheese
- 1 egg white, lightly beaten

Wild Rice Stuffing for Turkey

Margherita Pizza (Pizza Margherita)

A light pizza with olive oil, garlic, fresh basil, fresh tomatoes, mozzarella and Parmesan cheeses
- 12 inches thin pizza crust (I use Boboli 12-inch thin crust)
- 1 tablespoon extra virgin olive oil
- 2 garlic cloves, finely chopped
- 3 -4 large basil leaves, cut into strips
- 2 small tomatoes, cut thinly
- 4 ounces mozzarella cheese, shredded
- 2 tablespoons parmesan cheese
- salt and pepper, to taste
- crushed red pepper flakes, to taste
