Mexican Lasagna

Preheat the oven to 350°F
- Cooking spray
- 1 pound extra lean ground beef or turkey breast
- 1/2 large onion, chopped
- 1 large clove garlic, minced
- 1 1/2 cups low-fat cottage cheese
- 1 cup fat-free sour cream
- 1 jar (4 ounces) chopped green chile peppers
- 1/2 cup chopped cilantro (optional)
- 2 teaspoons ground cumin
- pinch of salt
- 2 1/2 cups fresh salsa
- 4 whole wheat tortillas (6" in diameter), halved

- 2 large eggplants, sliced lengthwise 3/4-inch thick (8 slices)
- 5 tablespoons olive oil, divided plus more for baking dish

- 2 tablespoons extra-virgin olive oil
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 2 medium carrots, cut diagonally into 1/2-inch-thick slices
- 2 celery ribs, halved lengthwise, and cut into 1/2-inch-thick slices
- 4 fresh thyme sprigs
- 1 bay leaf
- 2 quarts chicken stock, recipe follows
- 8 ounces dried wide egg noodles
- 1 1/2 cups shredded cooked chicken

Skinny Coconut Shrimp

Preheat oven to 425°. Spray a non-stick baking sheet with cooking spray
- For the Sweet and Spicy Dipping Sauce:
- 1 lb (24) large raw shrimp, peeled and deviened (weight after peeled)
- 1/2 cup + 1 tbsp shredded sweetened coconut
- 1/2 cup + 1 tbsp panko crumbs
- 2 tbsp all purpose flour (you will only use 1 tbsp)
- 1 large egg
- pinch salt
- non-stick spray (I used my misto)
- 1/2 cup apricot preserves (you can use sugar free if you wish)
- 1 tbsp rice wine vinegar
