Cowboy Caviar

Combine black eyed peas, beans, corn, green onion, bell pepper, tomatoes, jalapenos, and cilantro in a medium bowl
- Dressing:
- 1 (15 ounce) can seasoned black-eyed peas, drained
- 1 (15 ounce) can seasoned or plain black beans, drained
- 3/4 cup frozen sweet corn, thawed
- 3 green onions, chopped
- 1/2 cup chopped green bell pepper
- 2 or 3 tomatoes, diced
- 10 jarred jalapeno pepper slices, diced (mild or hot depending on preference)
- 1/3 cup cilantro, chopped
- 1 ripe avocado, chopped
- Tortilla chips
- 1 tablespoon olive oil
- 1 tablespoon white wine vinegar
- 1/2 lime, juiced
- 1/2 teaspoon Dijon mustard
- Salt and pepper to taste

- 1 pound 8 1/2 ounces (750 grams) Granny Smith apples, peeled and cored
- 9 ounces (250 ounces) dried cranberries
- 1 onion, finely chopped
- 12 fluid ounces (350 ml) apple cider vinegar
- 7 ounces (200 grams) sugar
- 1 teaspoon ground ginger
- 1 teaspoon turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander

- 1 can of pink salmon
- 1 onion, finely diced
- 2 cups of seasoned bread crumbs
- 2 eggs, beaten
- 1 tablespoon of lemon juice

- 1 teaspoon of black pepper
- 2 tablespoons of butter
- 1 pack of thin spaghetti, 8 ounces, cooked

- Chopped parsley

Italian-Style Black Bean Soup

You'll need a 5- to 6-quart slow cooker for this full-bodied soup
- 1 pound dried black beans
- 1 tablespoon extra-virgin olive oil
- 2 medium red bell peppers, finely chopped
- 1 large onion, finely chopped
- 3 celery stalks, finely chopped
- 5 garlic cloves, minced
- 1 1/2 tablespoons ground cumin
- 1/4 teaspoon red pepper flakes
- Salt and freshly ground black pepper
- 6 cups lower-sodium vegetable broth
- 2 bay leaves
- 1/8 teaspoon baking soda
- 2 tablespoons fresh lime juice
- Lime wedges, chopped fresh cilantro, diced red onion, diced avocado, and/or reduced-fat sour cream, for garnish
Shrimp and Wild Rice Casserole

- 1 (8-ounce) package wild rice
- 1 pound medium shrimp, peeled and deveined
- 2 tablespoons butter
- 1/2 green bell pepper, seeded and chopped
- 1/2 onion, chopped
- 1 (10 3/4-ounce can) condensed cream of mushroom soup
- 2 cups grated sharp Cheddar

- •3 tablespoons flour

- •1 large onion (or 2 medium), halved and cut in 1/4 inch slices
- •1 tablespoon vegetable oil
- •1 large sweet potato, cut in 1 1/2-inch cubes
- •1/2 cup beef stock (canned, or from bouillon or base)
- •1/4 to 1/2 teaspoon cinnamon
