- 3 cups canned vegetable broth
- 8 ounces asparagus, ends trimmed, cut into one inch pieces
- 1 cup dry white wine
- 2 3/4 teaspoons saffron threads
- 1 1/2 tablespoons olive oil
- 1 cup arborio rice, or medium grain white rice
- 1 cup frozen petite peas, thawed
- 1/3 cup freshly grated Parmesan cheese

- 3 tablespoons butter
- 1/2 ounce dried porcini mushrooms
- 2/3 cup chopped onions
- 1 cup arborio rice, or medium grain white rice
- 3 1/2 cups low salt chicken broth
- 1/2 cup chopped and peeled carrots
- 1/3 cup Romano cheese, freshly grated
- 4 teaspoons fresh tarragon, chopped
- 1 egg, beaten to blend
Tortilla Soup

Cook onion in butter over moderately low heat in saucepan, stirring occasionally until onion is softened
- 1/2 onion, finely chopped
- 3 tablespoons unsalted butter
- 1 1/2 4 oz. cans mild green chilies, drained, seeded and finely chopped
- 2 14 oz. cans plum tomatoes, drained, seeded, and finely chopped
- 6 ounces cream cheese, cut into bits
- 1 14 oz. can chicken broth
- 1 1/2 cups half and half
- 5 teaspoons fresh lemon juice
- garlic powder, to taste
- cayenne, to taste
- cumin, to taste
- salt, to taste
- jack cheese, grated
- 12 ounces chicken breasts, cooked and finely chopped, optional.
Salami Hors d'oeurves

Remove salami wrapper. Score criss cross over top of salami
- 2 lbs salami
- 2 tablespoons mustard
- 1/4 cup apricot preserves, (or peach preserves)
