350 Line bottom on 10 inch spring form with foil
- 7 eggs, separated
- 1/2 teaspoon coarse Josher salt
- 1 cup sugar
- 1/3 cup vegetable oil
- 1/4 cup frozen orange juice concentrate, thawed
- 3 tablespoons grated orange peel
- 1/4 teaspoon fresh lemon juice
- 3/4 cup Matzoh cake meal
- 5 teaspoons potato starch
- 3/4 cup unsalted margarine
- 1 1/2 lbs bitter chocolate, chopped or may use semi-sweet
- 1 cup frozen concentrated orange juice, thawed plus 2 tbsp
- 3 tbsp honey
Spicy Southwestern Oven Fried Chicken

Position rack in center of oven and preheat to 400
- 3 slices white bread, cut into 1" pieces
- 3 tablespoons cilantro leaves, fresh
- 2 tablespoons cornmeal, yellow
- 2 tablespoons pine nuts
- 2 cloves garlic, large
- 1 1/2 teaspoons cumin, ground
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1 pinch cloves, ground
- 2 teaspoons egg whites
- 2 tablespoons Dijon mustard
- 1 tablespoon water
- 2 teaspoons honey
- 4 each chicken thighs, skin and fat removed
- 4 each chicken drumsticks, skin and fat removed
- salt
- pepper, freshly ground
Zucchini Bread

Blend on low speed 1 minute then medium speed 1 minute with a hand mixer
- 4 cups zucchini, coarsely shredded
- 3 cups flour
- 2 1/2 cups sugar
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons baking soda
- 1 to 1 1/4 cups vegetable oil
- 4 eggs, beaten
- 1 tbsp plus 1 tsp vanilla
- 1 tablespoon cinnamon
- 1/2 teaspoon baking powder
Chocolate Orange Triangles

1. Preheat oven to 425, lightly butter baking sheet 2
- 5 ounces bittersweet chocolate, coarsely shopped
- 2 teaspoons freshly grated orange zest
- 2 eggs, beaten lightly
- 3 sheet frozen puff pastry, thawed
- Powdered sugar, to taste
Spinach Dip

In food processor, chip parsley, onions and dill weed
- 2 packages frozen chopped spinach, defrosted
- 1/2 cup parsley
- 1/2 cup green onions
- 1 teaspoon dill weed
- 1 1/2 cups mayonnaise
Matzah Brittle for Passover

Preheat oven to 350. Grease a cookie sheet that has sides
- 1 cup butter
- 1 cup brown sugar
- 1 cup chopped nuts
- 1/2 to 1 cup chocolate chips
- 3 pieces matzoh
Spinach Dip 2

Cook spinach. Drain and cool
- 1 package frozen chopped spinach
- 1 cup mayonnaise
- 1 cup sour cream
- 1 can chopped water chestnuts
- 1 bunch green onion, shopped
- 5 drops Tabasco sauce
- round loaf of sourdough bread, hollowed
Zucchini Casserole

Preheat 350 Cube zucchini and steam
- cut in half
- 3 lbs zucchini
- 4 eggs, beaten
- 1/2 cup milk
- 1 4oz. can Ortega diced green chilies
- 1/4 cup parsley, chopped
- 1 lb jack cheese, shredded
- 1 teaspoon salt
- 2 teaspoons baking powder
- 1 cup bread crumbs
- 2 tablespoons margarine
Pumpkin Cheese Cake

Butter sides and bottom of 10" spring from pan
- 1/4 cup graham cracker crumbs
- 4 8 oz packages cream cheese
- 1 1/2 cups sugar
- 5 eggs, large
- 1/4 cup flour
- 1/4 teaspoon salt
- 1 16 oz can pumpkin pie filling
- 2 teaspoons pumpkin pie spice
