Chocolate-Pistachio Biscotti

1. Preheat oven to 350 degrees
- 2 cups all-purpose flour (spooned and leveled)
- 1 cup sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup shelled unsalted pistachios
- 4 ounces dark chocolate, chopped
- 3 large eggs
- 2 tablespoons unsalted butter, melted
- 1 teaspoon pure vanilla extract
- 1/4 cup unsweetened cocoa powder
Salsa Verde Chicken Tacos

Peel the leaves from the tomatillos and take out the stem
- 8 tomatillos
- 2 cloves garlic
- 1/2 or 1 serrano chile (I use 1/2)
- 1/4 onion
- 2 cubes chicken boullion
- 1/4 cup water
- small bunch cilantro (I use about half of a small bunch)
Sloppy Joes

In a medium skillet over medium heat, brown the ground beef, onion, and green pepper; drain off liquids
- 1 pound lean ground beef
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 7 1/2 oz tomatos, cut up
- 2 tablespoons oats, rolled
- 1 to 1 1/2 teaspoons of chili powder
- 1 to 2 teaspoons of Worcestershire sauce
- 1/2 teaspoon garlic salt
- dash of hot pepper sauce
- 1/4 cup tomato sauce
Cornmeal crusted Fish Sticks

Preheat oven to 250 degrees
- 4 large egg whites
- Coarse salt and ground pepper
- 1 pound skinless tilapia fillets, cut into 1-by-3-inch strips
- 1 cup yellow cornmeal
- 1/2 cup all-purpose flour
- 1 cup vegetable oil
- Ketchup, for serving
